I have a question about the different types of mexican cuisines. In my hometown, there are several mexican restaurants with the same menu and all the food tastes the same. They all have a Speedy Gonzales lunch combo, the plates are crammed with enchiladas/burritos, tacos, rice, and beans, and they serve items such as tostaguacs. The enchiladas and burritos are filled with ground beef and topped with a certain type of sauce. The rice does not have a tomato texture to it, it almost has a red chile and garlic taste to it. Anyway, the food is probably very comforting and fattening. What style of mexican food is this?
I grew up in Mexico and I can tell you all of the food in those restaurants is americanized big time.It works for the american palate and it makes them money it will never fly in a mexican neighborhood.Mexicans would never use chili powder for the enchilada sauce or swiss american cheese on every single dish.
Is like saying taco bell is true mexican. If you want to try real mexican food go to a restaurant in a mostly immigrant population and where all the mexicans eat,you will be surprised at the difference.

Everybody cooks different, i cook different then my mom, i like my rice better then hers, that's because i use tomato paste and she used real tomatoes so mine comes out red and hers doesn't, she adds salt and that chicken flavor powder, i just add the powder…
The cooking for the restaurants here taste different.

it's generally Tex Mex
the best authentic cookbook i have is the William Sonoma Mexican book. i love this book and i would say it's really close to the real thing! it also has some my families favorite recipes of all time! if you get this book ( which i highly suggest) try the meatball recipe first….

Americanized quasi Mexican.
Not Mexican at all.
Burritos, fajitas and nachos are American inventions. Tostaguacs, well that is just a play with words, maybe getting tostada and aguacate (avocado) together. Believe me, a real Mexican laughs at the so called Mexican food offered in restaurants who have to cater to the accepted tastes of Americans, who seem to think they know it all when it comes to Mexican food. English is a living language, that means new words come out all the time, if they are popular and widely used, they might make it into the dictionary…who knows. Although Mexicans might find the term tostaguac unpalatable because when one wants to vomit, the informal term is guacarear, so I don´t think that term will be popular with true Mexicans.
As to comforting…well I don´t think so. Fattening, well, American food is very fattening, not so the authentic Mexican which tends towards using natural ingredients. I´ve had Americans try to correct me when it comes to Mexican food. Obviously they've never eaten the real stuff or even leafed through a Diana Kennedy cookbook, let alone eat something in Mexico itself.
