Well, I still have a lot of ethnic cuisines to experience, so I'm not sure really. My opinion is based solely on the cuisines I have tried so far... (The Peruvian sea food dishes sound REALLY good, by the way)... but I would say... - Cuban (though I might be biased.. lol) - Italian - and a tie between Indian and Mexican I also hear that Ethiopian cuisine is vey good!
