well, heres a few good ones...

enchiladas [ chicken are better in my opinion ], tinga [its chicken, cabbage, onion &amp; chipotles in adobe ], chile verde con puerco (green sauce with pork), chilaquiles (its terrific &amp; so delicious), carne de res (beef stew/soup)..

mexican rice is so good; he&#039;ll love that !! also frijoles (beans)..

for dessert, tres leches cake (so good), or flan&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;hope this helps</description>

		<description>ENCHILADAS ARE OK, BUT I WOULD SUGGEST SOMETHING LIKE CARNE GUISADA OR A CHILE RELLENO. YOU CAN SERVE THESE WITH SPANISH RICE AND REFRIED BEANS. MAYBE EVEN SOME MOLE AND SERVE IT OVER WHITE RICE OR MENUDO. IT REALLY DEPENDS ON WHAT HE LIKES. HERES THE MOST TRADITIONAL DESERT FOR MEXICANS.


FLAN
8 eggs 
2/3 cup sugar 
1/4 teaspoon salt 
2 (12 fluid ounce) cans evaporated milk 
2 teaspoons vanilla 
1/2 cup brown sugar 

DIRECTIONS
Beat eggs slightly; add sugar and salt. Blend in milk and vanilla. Sift brown sugar into bottom of eight 5-ounce custard cups or a 1-1/2-quart baking dish. Pour custard mixture over sugar. Place in shallow baking pan of hot water. Bake at 325 degrees F for 30-40 minutes or until knife inserted near center comes out clean. Chill overnight. Sprinkle with additional brown sugar before serving or unmold to serve&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;</description>
