I need a good Mexican dish to make for dinner?

Doesn’t have to be super authentic, just good even for picky eaters,thanks!

Enchiladas with flour tortillas instead of corn.

Brown and season the meat (I use ground pork and beef).
Spoon it into the tortillas.
Dip or roll each in enchilada sauce (Any canned variety is okay).
Line up rolled enchiladas in a 9 x 13 pan (glass is best).
pour remaining sauce over the pan when filled.
Bake at 350°F oven for 15-20 minutes. Remove and cover with cheese (cheddar or Monterrey jack). Return to oven until cheese is melted and just beginning to brown.

Sometimes I put one type of cheese inside with the meat and onther on top. Sometimes I add slice avacado inside the rolls.

    Tacos or enchiladas

    Tacos are fantastic because people can put whatever they want on them and avoid stuff they don’t like if you let them make there own tacos.

    As a side dish mabey so spanish rice? There are some good mexican rice dishes online just type it into google.

    well since i live in a mexican family but am white heres some things you can serve! papusas,tacos,enchiladas red and green, spanish rice carnitas burritos or chile verde, quesadilla with jalepenos! and there others! hope you find what your looking for!

    i make this thing which is super amazing. i boil ric and than mix in a can of corn, can of tomato sauce (low soiumd) taco seasoning (low sodium) and grilled chicken breast i serve that with some cheese mixed in and a nice green salad its amzing as it has all the food groups mixed in there hope you like it!

    here’s something easy… "entomatadas": cheese tacos (you can add crumbled chicken instead of cheese) and then on top it add tomato sauce (just tomatos blended with a bit of onion and salt) and then cream and cheese, and take it to microwave.

    you can also make guacamole, avocado with onion and tomato (and jalapeño if you like), do you know maggi sauce? you can add some or salt instead.

    You got to go with tacos. Noboby can say no to a nice taco with cheese, tomatos, lettuce, and whatever you want on it. Nice and simple.
