I am having a Mexican themed dinner. I love mexican food, but am looking for some original ideas to add to my favourites! Do you know any authentic Mexican dishes that are deeee-lish??? Thanks for the ideas!

Saute onions in a little olive oil until soft. Add chopped chorizo. Cook a little longer. The chorizo spices will give it tons of flavor. Garnish with fresh parsley over top. Mexican rice on the side.

I love Mexican Corn Pudding or Sweet Corn Cake. It is a side dish served at restaurants like Chevy’s. I have made it for potlucks and have been asked many times for the recipe. It is made in a large pan and then scooped onto serving plates. Very easy to make—main ingredients are corn, corn flour, butter, sugar.

Another idea for an appetizer that great is Empanadas– Little tiny turnovers.
I take pie crust dough and cut it in 3" circles. Then I make taco meat (browned ground beef w chili seasoning) . Put teaspoon of ground taco meat on the crust and a little shredded cheese—then fold in half–crimp edges to seal. Now just bake until golden brown.

I love, love, LOVE chicken enchiladas with molé sauce. It’s a sauce that has chocolate in it, but not very much, so it gets this rich brown color but it doesn’t taste sweet, it certainly doesn’t taste like chocolate. It’s just spicy and rich and wonderful. It’s authentic Mexican, but the enchilada part may be Tex Mex. I’ve also seen with the sauce served over grilled meat. Chili rellenos are tasty as well. Another favorite of mine is from a great Mexican restaurant in my home town in Texas. I’ve been told it’s more Mexican than Tex Mex. It’s tacos made from soft corn tortillas, filled with the juiciest brisket, cooked onion and spicy green pepper, and white cheese.
Appetizers, I love guacamole, home made, with a squeeze of lemon and some salt on the top. Tasty on it’s own! Tamales are good, as is tortilla soup. Chicken flautas would be a nice appetizer, too, nice and crispy and you can cut them into smaller pieces.
Dessert … I have a Mexican friend and he makes the best flan EVER. When he makes it, I think he uses cream cheese, it’s almost cheese cake like in texture as opposed to flan out of the box which is more like Jell-O. Don’t know if it is Mexican or other Latin American, but Tres Leches cake is also really good.
For sides, you must have a really good salsa available. I like to mix this with Spanish Rice. Refried beans are good, you can also make them with black beans which is tasty but different.

Biria is the best if its cooked correctly. It can be made with goat, lamb or beef. The secret is, not to make it greasy.

I agree with MOLE! Yes it can be on top of enchiladas or you can put it on top of chicken with red rice.
