my boyfriend wants a real, authentic Mexican meal.. any ideas,?
not tacos, something authentic like, something i have to actually make , not like, pull out of the box and put on the stove.
Authentic Mexican cuisine is very rich and varied and great recipes can be found using any number of main ingredients that he might enjoy. Find out what meat/vegetable he really likes and focus on real Mexican recipes for that.
You can go from street food of tacos, tortas, sopes, etc. to more exotic dishes like mole, conchinita pibil, or the seafood of the coastal cities like huachinango or ceviche.

Carne a la tampiqueña: a nice steak or filete, a mole enchilada, chorizo, some refried beans, rajas, rice on the side. As an appetizer serve sopa azteca.
Another authentic Mexican meal is turkey with mole poblano served with rice and tortillas.

Nothing is more undeniably Mexican than Mole. It is difficult tom make from scratch however, you can make it easier by purchasing ready made mole paste at any Mexican grocery store. Tacos are not an actual dish but a method of serving food, since tortillas are a staple, this is similar to sandwiches not being considered a main course.Foods like tacos and tortas are actually street junkfood and not actuall entrees.

u can make quesadilllas really simple u buy tortillas and mexican cheeses and there
then there is posolle or pozolle however its spelled but that might be a bit harder or frijoles ranchos or however there spelled
