authentic mexican restaurants do not use ground beef, they use shredded, cubed or whatever from the piece of meat, but not ground. spices often used in mexican cooking are various chiles for red & green sauces — hot or mild –cumin, salt, garlic, chocolate for moles…

sorry I have no knowledge of Sydney however I feel your pain I love mexican food. I live in Oregon about a 12 hour drive from Mexico and all our stores supply authentic mexican foods. Perhaps you could mail order spices and what not. I am sure you have beef and fish. My 2 favorite meats to be prepared Mexican style. There has to be someplace to order it from. I have heard that people here in The United States have pastries shipped overnight from French Bakerys.
One last thought if you are into mexican food you need to try Savichie! Pardon my spelling but that is how it sounds. It is made with either red snapper or shrimp and cooked with no heat, but rather with lime. It is really good!!!
