I love taco salads, salsa, and beans. Can you share some of your favorites (recipes would be nice) with me?

Absolutely delicious and oh so very moreish! Don’t hesitate to make it.
Sounds similar to the ABC mexican on your answers.
2 avocados
1 cup sour cream
1/2 cup mayonnaise
1 tin refried beans
2 tablespoons lemon juice
salt & pepper
1 packet mexican taco seasoning
4 diced tomatoes
spring onions
grated cheese

combine sour cream, mayo and taco seasoning together.
Mash avocados, lemon, salt &pepper and put in separate bowl.
Spread beans on plate. Put mayo & cream mixture over beans.
Put avocado mix around the edge of plate
Place dhopped spring onions around in a circle at edge of plate, the adding row of tomatoes and cheese in the middle
Enjoy with Corn chips (or rice plain crackers for a low fat version)

Families like seafood and mexican food.

Are you just going to serve appetizers – or are you planning on serving appetizers along with a full meal? If you are going to have a full meal than maybe you can offer some choices for your entree’s in order to please everyone. Or perhaps you can do a buffet. You can have a seafood buffet station and a mexican station.

For the seafood station you can have Salmon, Breaded Talapia, Shrimp, Crab, Lobster, Corn on the cob, coleslaw, mashed potato’s, etc.
For the Mexican Station you can serve Chicken Enchiladas, Bean Burritos, Carne Asade, Grilled Tri-Tip, Refried Beans, Spanish Rice, Grilled Veggies, etc.

Or – if you are just going to do appetizers than you can serve a variety of things like this:

Quesadillas
Mini Burritos
Mini Taquitos
Chips & Salsa
Chicken Empandas
Shrimp Cocktail
Crab Cakes
California Rolls
Smoked Salmon

red salsa from mexican restaurants?

anyone know the recipe for the red salsa you get with chips as an appetizer before you order? its by far ( to me ) the best salsa ever.

Easy recipe but every restaurant’s salsa is different, some I’ve tried are pretty bland while some are amazing. This can be prepared on the stovetop or in the microwave oven, or even uncooked, which is usually called pico de gallo.

1 medium onion
3 medium tomatoes
1 to 3 jalapenos, depending on heat of jalapenos available and individual preference
1 tsp salt
1/2 tsp ground cumin
1 Tbsp chopped cilantro (optional) I personally do not like the flavor

Chop first 3 ingredients or grind in blender or food processor. Add next 3 ingredients and cook over medium heat until it reaches the texture you desire. Some prefer less cooking for a chunkier salsa, some prefer more cooking for a smoother consistency.

What kind of take out should I take to a vegetarian pot luck?

I don’t cook at all, but I recently joined a synagogue which has frequent dairy (vegetarian) pot lucks. That’s so that people don’t have to worry about whether the food is Kosher, not because these people are committed vegans or anything.

They have frequent (2x/month) dairy potlucks. I don’t do any cooking at all except for an occasional microwaved T.V. dinner. Mostly my husband and I eat all of our meals out.

I’m trying to think about what kind of foods I can get in 12 person servings for the pot lucks. This week I brought a vegetarian appetizer platter from Daphne’s Greek Cafe. I’ve already thought of Cheese Enchilada’s from the local Mexican place. I can occasionally bring a salad or desert, but I need to think of food I can get for a group at a take out or restaurant.\

P.S. Someone there is already famous for her lasagne and there’s almost always homemade Kugel.

I appreciate any suggestions.

The cheese enchiladas sound good. You can also buy a couple of premade spinach quiches at the grocery store. Or bring dessert…Costco has great apple pie.

I know there have been tons of these questions…I apologize. I’ve not been able to find what I’m looking for…Anywhooo….I want to make some kind of mexican dish (appetizer) for the SuperBowl. I was thinking of something like a dip with hamburger meat and cheese, sour cream , etc? As an added bonus….could you tell me a good dessert to serve as well (something easy to hold while watching the game) Thanks so much for your time.

Try a Taco Dip. Here is a good recipe.

1 pound ground beef
1 (16 ounce) can refried beans
1/2 cup hot taco sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup sour cream
1/4 cup chopped onion
1/4 cup chopped tomatoes
1/4 cup black olives, sliced
1/4 cup jalapeno pepper rings
1 1/2 cups shredded Cheddar cheese

Preheat oven to 350 degrees F (175 degrees C).

In a large skillet, brown ground beef and drain. Add refried beans, spicy taco sauce, chili powder and cumin. Spread this mixture into a 9×13-inch baking dish. Spread sour cream over meat mixture. Layer onions, tomatoes, olives, and hot pepper cheese over the sour cream. Top with the cheese.

Bake at 350 degrees F (175 degrees C) for 30 minutes.

Dessert – try Cheesecake Brownies. These are simple and sooo good.

1 (19.8 ounce) package brownie mix
1 (8 ounce) package cream cheese
1 egg
1/3 cup white sugar

Prepare the brownie mix as directed by manufacturer. Preheat oven to temperature indicated on box. Grease a 9×13 inch pan.

Spread the brownie batter evenly into the prepared pan. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer.

Bake according to manufacturer’s instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.

You can also try this recipe. This is a favorite now in my house. I just made some last night for my hubby’s b-day.

Not Yo Mama’s Banana Pudding

2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.

In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

Red Sauce

Ingredients:
1/4 cup red chile powder
1 to 1-1/2 cups water
1 Tbs. Olive oil
lime juice (bottled or fresh)
garlic powder
onion powder
oregano
salt
cumin
cilantro

Prep:
Heat olive oil in saucepan. Meanwhile, add water to red chili powder until desired consistency is reached (don't make it too runny). Pour into skillet, add about a capful of lime juice and desired amount of spices. Cook on low heat until heated through and flavors have blended. Serve with tacos, enchiladas, or any dish where red chili sauce is called for.

Salsa Verde (Green)

Ingredients:
water 3 cups
salt 2 1/2 tsps
garlic clove 2
serrano chile 4
tomatillo 1 lb husks removed
cilantro 1/2 cup loosely packed
onion 1/2medium – chopped

Prep:
In a saucepan bring the water and 1 teaspoon of the salt to a boil.
Add the garlic, serrano chile, and tomatillos.
Lower the heat and simmer for 10 minutes.
Drain and reserve a 1/2 cup of the liquid.
In a blender add the garlic, serrano chiles, tomatillos, cilantro, and the remaining salt.
Puree adding the remaining liquid to get the desired consistency.
Poor into a bowl and stir in the chopped onion.
Let the salsa cool before serving.

tostadas- easy way.

tostadas any brand is good, sour cream, lettuce, tomato, mexican cheese the one that crumbles, refried beans in a can

cook the ground beef of course then you get the tostadas and put the beans and then sour cream or you could put the sour cream on last…anywho after beans put ground beef ,lettuce and tomato and then the cheese.

you could also use steak and chop up in rather small pieces instead of the ground beef.

you could take all the stuff with you cooked and let everyone put their tostada together.

i hope this helps. you could ask me for other mexican or whatever kinds of food ideas. hope you like it
