I know there have been tons of these questions…I apologize. I’ve not been able to find what I’m looking for…Anywhooo….I want to make some kind of mexican dish (appetizer) for the SuperBowl. I was thinking of something like a dip with hamburger meat and cheese, sour cream , etc? As an added bonus….could you tell me a good dessert to serve as well (something easy to hold while watching the game) Thanks so much for your time.
Try a Taco Dip. Here is a good recipe.
1 pound ground beef
1 (16 ounce) can refried beans
1/2 cup hot taco sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup sour cream
1/4 cup chopped onion
1/4 cup chopped tomatoes
1/4 cup black olives, sliced
1/4 cup jalapeno pepper rings
1 1/2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, brown ground beef and drain. Add refried beans, spicy taco sauce, chili powder and cumin. Spread this mixture into a 9×13-inch baking dish. Spread sour cream over meat mixture. Layer onions, tomatoes, olives, and hot pepper cheese over the sour cream. Top with the cheese.
Bake at 350 degrees F (175 degrees C) for 30 minutes.

Dessert – try Cheesecake Brownies. These are simple and sooo good.
1 (19.8 ounce) package brownie mix
1 (8 ounce) package cream cheese
1 egg
1/3 cup white sugar
Prepare the brownie mix as directed by manufacturer. Preheat oven to temperature indicated on box. Grease a 9×13 inch pan.
Spread the brownie batter evenly into the prepared pan. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer.
Bake according to manufacturer’s instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.

You can also try this recipe. This is a favorite now in my house. I just made some last night for my hubby’s b-day.
Not Yo Mama’s Banana Pudding
2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream
Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.
