this Sunday. Everyone is bringing a dish. This years meal theme is Mexican dishes. Does anyone have recipe for a Mexican casserole made with ground beef and/or chicken? I’ve checked some recipe sites online, but they all seem to be the "same old, same old". Anybody have maybe an authentic Mexican version?

Mexican Casserole Recipe

This is a delightful, and quick dinner for Mexican food lovers.
Prep:30m Cook:60m Servings:8

Ingredients
1 lb. Ground beef
1 large onion
1 large bell pepper
1-2 packages of taco powder ( to your taste)
1-2 cans cream of mushroom soup (to thicken)
1 container of sour cream
1 bag of Tortilla chips
2 bags shredded cheese

Directions
chopp onions and bell pepper to your desired size
cook ground beef ( just like you are going to make tacos)
drain excess oils from beef [ to soften the beef you might like to cook the meat in water]
add onions and peppers to the beef and cook until they are tender
add taco powder and let it simmer for about 2 minutes
add cream of mushroom soup [enough that it thickens the mixture]
let simmer for 10 minutes
pour mixture into a casserole dish crush a few tortilla chips and sprinkle accross the top
cover the to with cheese and let cook until the cheese is bubbly.

Mexican Chicken Casserole

A Mexican chicken casserole recipe with chicken, taco sauce, and seasonings, along with taco chips and cheese.

INGREDIENTS:

4 boneless chicken breast halves, cooked, cubed
1 can tomatoes with green chilies
1 can cream of mushroom soup
1 can cream of chicken soup
1 can (4 ounces) taco sauce
1/2 cup chicken broth
1 package taco chips or Doritos
1/2 to 3/4 cup grated American cheese, Mexican blend, or Classic Melts blend

PREPARATION:

In a saucepan, combine and heat tomatoes, soups, taco sauce and broth. Line bottom of casserole dish with taco chips. Add mixture of chicken and sauce. Top with grated cheese. Bake at 350° until bubbly and hot.
Serves 4.

One of mine is:

Mexican Chicken

Line a greased 13 X 9 casserole dish with crushed doritos (1-2 Cups)

In a bowl mix 2 boneless chopped chicken breasts, 2 cans cream of chicken soup, 1 can rotel tomatoes and green chiles, and 1/2 of a bag of mexican blend shredded cheese

Pour on top of crushed doritos and bake at 350 for 30 minutes

Take out of oven, top with remaining shredded cheese and more crushed doritos (1-2 Cups)

Bake for about 5 more minutes, just to melt the cheese.

What are some of your favorite recipes?

Take a large bread pan spay with cooking spray.

Layer pan with Prosciutto, Mozzarella, Chicken-breast, Spinach leaves-(must be fresh), dried tomatoes.

Arrange in any way you desire. Just make sure the cheese is not on tthe bottom or it will burn.

Place a Brick, double layered in heavy-duty tin-foil, on top and leave in the frig over night.

Preheat oven to 450-F Later remove brick of course, top with bread crumbs (food not the brick) (sour dough works best).

Cook for 35 minutes, of until crumbs are golden brown and cheese is bubbley.

Let sit until the pan is able to be handled, flip over to remove, cut into bread thick slices and serve while still warn.

Best served alongside light soup/bread sticks and good friends.

My mother used to make what she called "mexican casserole"?

It had beef, corn tortillias, onions&peppers, and cream of mushroom soup. (I remember i always thought eww when she put the mushroom soup in) I have no idea what else was in this recipe or how to cook it or anything else but it was so delicious. Sadly I can’t ask her what was in it, but I was wondering if any of you awesome ladies out there have any idea. I don’t know if she made it up herself (she was an awesome cook) or if its a real recipe out there somewhere. Any input would be so much appriciated. Haven’t had it since I was a little girl and it started sounding good the other day, still remember exactly what it tasted like! Thanks so much for your time.

Sounds like Enchilada Casserole to me.
She may have made some alterations or substitutions.

2 lbs. ground beef
6 corn tortillas
1/2 can cream of chicken
12 oz. Velveeta
2 oz. pimentos
1 can Ro-Tel tomatoes (including juice)
1 med. onion
1/2 can cream of mushroom
1 can Cheddar cheese soup
8 oz. Mozzarella
1 sm. can green chilies

Brown meat and onion.

Combine all soups (Ro-Tel also) and 3/4 Velveeta in saucepan and warm.

Place pieces of tortillas in greased 13×9x2" casserole dish. Layer meat, soup, pimentos, green chilies and remainder of Velveeta (combined with Mozzarella) ending up with last layer being cheese.

Cook in oven at 350 degrees

PINTO BEAN ENFRIJOLADAS
Enfrijoladas are a popular breakfast dish in Mexico.
Servings: Makes 6 to 8 servings.
Ingredients
3 tablespoons plus 1/4 cup olive oil
2 cups chopped onions
4 garlic cloves, minced
2 15- to 16-ounce cans pinto beans, drained
1 1/2 cups (or more) whole milk
1 1/2 cups (or more) water
1 teaspoon minced serrano chile with seeds
3/4 teaspoon ground cumin
1/2 teaspoon dried Mexican oregano
1/8 teaspoon ground cloves
12 5 1/2- to 6-inch-diameter corn tortillas
2 1/4 cups crumbled queso ranchero*
Chopped fresh cilantro
Sour cream
Preparation
Preheat oven to 350°F. Oil 13×9x2-inch glass baking dish. Heat 3 tablespoons oil in large skillet over medium-high heat. Add onions and garlic and sauté until onions are golden, about 8 minutes. Add beans, 1 1/2 cups milk, and 1 1/2 cups water; simmer until onions are tender, stirring occasionally, about 10 minutes. Mash beans coarsely in skillet. Mix in chile and all spices; season with salt and pepper. Add more milk or water by 1/4 cupfuls to thin bean mixture to slightly soupy consistency.
Heat remaining 1/4 cup oil in another large skillet over medium-high heat. Add 1 tortilla at a time; cook until tortilla softens, about 30 seconds per side. Transfer tortilla to work surface. Place 1 heaping tablespoon cheese in center of each tortilla; fold in half. Place in prepared dish, overlapping tortillas slightly. Top with bean sauce.
Bake until enfrijoladas are heated through and sauce is bubbling, about 20 minutes. Sprinkle with remaining queso ranchero and cilantro. Serve with sour cream.
*Mildly salty cheese that crumbles easily; also labled queso fresco or queso casero. Queso cotija or mild feta can be used instead.

I like mexican, italian and good old fashioned meat and potatoes.

Shepherd’s Pie
1 1/2 pounds lean ground beef
2 tablespoon butter
1 teaspoon Worcestershire sauce
2 eggs, separated
6 tablespoons butter
8 potatoes, peeled, boiled, and mashed
1 cup finely chopped onion
1 tablespoon ketchup
beef broth
1/2 cup heavy cream
1/4 teaspoon garlic powder
Parmesan cheese

Brown ground beef and sauté onions in 2 tablespoons butter until golden. Mix ground beef with onions, ketchup, Worcestershire sauce, salt, and pepper. Add a few tablespoons of beef broth and cook, covered, over low heat for 15 to 20 minutes, adding more beef broth as necessary to keep moist. Beat egg yolks until light, then in another bowl, beat whites until stiff. Beat the yolks, cream, 6 tablespoons butter, and garlic powder into hot mashed potatoes. Gently fold in beaten egg whites. Put meat mixture into a casserole then top with potato mixture. Sprinkle with Parmesan cheese and bake at 350° until potato topping is puffed and browned, about 25 to 35 minutes.

Vegetarian Mexican Casserole?

My friend made a vegetarian mex casserole that had black beans in it and was AWESOME. Can anyone give me a recipe?

1 (16 ounce) can refried beans
3/4 onion, diced
5 (10 inch) flour tortillas
1 cup salsa
2 cups shredded Cheddar or Colby Jack cheese

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch pie pan with non-stick cooking spray.
In a saucepan, cook refried beans and onions (to soften them) on medium-high heat for about 5 minutes.
Place one tortilla in the bottom of the greased pan. Spread about 1/3 cup of the bean mixture over it. Layer a few tablespoons of salsa over this. Then, place another tortilla over the salsa, and add more of the bean mixture. Follow the beans with a big handful of cheese, spreading evenly. repeat layers, spreading the ingredients evenly over the tortillas. On the top layer, make sure to use lots of salsa and cheese!
Bake until the cheese is melted, approximately 15 to 20 minutes.

I’m making a layered mexican casserole, I need an answer ASAP?

I’m using a recipe from the Betty Crocker Casserole recipe book. The recipe calls for Spanish rice to be added in the casserole. This is what it says: "Spoon and spread Spanish rice over tortillas" but no where in the recipe does it say to cook the rice. I know in some casseroles you put dry rice in and it’ll cook itself in the oven, but I’m not sure if that’s the case here. Will the rice cook on it’s own or should I cook it FIRST then put it in? The other ingredients are ground beef mixed with salsa. So would that help cook the rice? I’m lost here…can someone help…QUICK?!?! I’m in the middle of cooking it now.

Please, serious answers only, don’t be an idiot and write something stupid just so you can get "points" that don’t mean anything!

It sounds like your recipe is sort of assembly instructions. You want to cook your rice and your meat prior to layering over the tortillas. Otherwise the length of time required to cook the rice and meat will cause your tortillas to turn into mush.

I want to make one instead of the usual tacos that are planned.

Well I like to make Chili Pie

This works with any kind of baking dish , if you have a wider baking dish then just use two tortilla’s side by side for each layer instead of one.
Preheat oven to 400 F
Lay down flour Tortilla(s) in a sprayed baking dish or pie tin.
Spread chili on top of the tortilla(s) about a half inch thick.
Add a layer of shredded cheese just enough to cover the chili.
Add another layer of tortilla(s)and keep repeating layers until you reach top , covering the last layer with tortilla(s)
OPTIONAL: Add onions and cilantro to each chili-cheese layer and if you like spice throw some sliced jalapeno’s on there as well.
Put it in the oven and bake for 12- 18 minutes … until the dish is hot , cheese is melted and the tortilla(s) on top are kind of crispy

This dish is super fast to make and is pure cheesy goodness

Mexican Cornbread Casserole?

I’m looking for a recipe for Mex cornbread casserole with ground meat.

I am not sure if this is what you were looking for but it has always been a favourite in my family.

TAMALE PIE

1 lb. ground beef
Dash Tabasco
1 can tomato soup
1 can corn
½ tsp cumin
1 can kidney beans
2 tbsp chilli powder
Dash salt and pepper
Microwave: Cook beef 5 min stir ½ way. Drain beef. Add everything. Cook for 6-8 min until boils.
corn bread topping:
Mix:
¾ c corn meal
1 c flour
¾ tsp salt
1/3 c sugar
3 tsp baking powder
Add:
1 c milk
1 egg (well beaten)
2 tbsp melted shortening

Put cornbread on top of meat mix and bake at 425 F for 20 min or microwave for for 5 min (until bread is baked).
