it’s made with jiffy corn muffin mix

This is the corn casserole I always make. I don’t know if it’s the same or not.

Very Yummy Corn

Ingredients:

1 can creamed corn (15.25 oz.)
1 can whole kernel corn with juice (15.25 oz.)
1 package of Jiffy corn muffin mix
1 stick of butter, melted
2 eggs, beaten
1 cup of sour cream
¼ cup of sugar, optional

Directions:

Mix all of the ingredients together. Pour into a greased casserole dish. Bake at 350 degrees for 1 hour.

1(15ounce)can whole kernel corn, drained
1(15ounce)can black beans, rinsed & drained
1(8ounce)carton sour cream
1(8ounce)jar Pace Picante Sauce(I use medium hot)
2 cups shredded colby-monterey jack cheese
1(10ounce)can diced rotel tomatoes and green chilies
2 cups cooked rice
1/4 teaspoon black pepper
1-2 green onion, chopped
sliced black olives(for topping)
8 ounces shredded monterey jack cheese(for topping)

Combine the first 9 ingredients. Spoon into a lightly greased 9 x 11 inch baking dish. Sprinkle with the sliced black olives and shredded Monterey Jack Cheese. Bake at 350 degrees F. for about 50 minutes.

MEXICAN CASSEROLE
1 pound hamburger meat
1/4 onion chopped fine
1/2 teaspoon garlic powder
1 can Ranch Style beans
1 cup cheddar cheese, grated
1 can cream of chicken soup
1 can original Rotels, undrained
6 corn tortillas
Brown meat with onions and garlic powder. Drain. Add salt and pepper to taste. Add ranch style beans and stir. Line 9 inch x 13 inch pan with the six tortillas. Pour meat mixture over tortillas. Sprinkle cheese over meat mixture.Mix soup and Rotels in bowl. Spread soup mixture over cheese.
Cover with foil, and bake at 350 degrees for approximately 30 minutes (until hot and bubbly).

Superbowl Appetizer Recipes?

Any great tried and tested recipes out there? I'm always looking for a new favorite! Here's one I am going to try:
Buffalo Chicken Dip
2 cans shredded chicken
2 8-oz packages cream cheese
1/4 – 1/3 cup hot sauce (Franks, Buffalo sauce, etc.)
1 cup ranch dressing
1 1/2 cup shredded cheese (I'm going to try mexican)

Layer cream cheese at bottom of casserole dish, mix other ingredients separately (except cheese) and spread over cream cheese. Cover top with cheese, heat in oven at 350 until cheese is bubbly.

Let me know your suggestions for other recipes!

Here are some of my favorites:

Cream Cheese Cracker Spread:
Scallions, chopped black olives, cream cheese, cup grated cheese, dash garlic powder, dash onion powder, dash white pepper, dash salt. Blend together. shape into ball. serve with crackers. Optional: roll in chopped nuts.

Chicken Wings

We're all about easy! I buy the best sauce I can find for the flavor I want (terriaki, BBQ, etc.), then put the wings and the sauce in the crock pot until done (about 4-6 hours). If they're done sooner, I turn the crockpot to 'warm' and let them simmer. Yum!

This is the best and easiest dip recipe, and people always rave! I tell them it’s really hard to make (lol):

Cream Cheese Dip

2 large blocks of cream cheese
1 large jar Pace picante (medium)-use most of the jar

Soften cream cheese and mix with hand mixer until smooth. Add picante and mix with hand mixer. Leave in frig for a few hours to blend flavors. Serve with tortilla chips.

I know it seems too simple to be great, but it is!

Crab Dip is easy and very good.

1pkg Softened Cream Cheese
2 Tbsp Minced Onions
1/3 C. Bottled Chili Sauce
1 Can of Crab meat
Parsley Flakes to Garnish

Mix onion with cream cheese and spread on serving plate. Top with chili sauce. Sprinkle rinsed drained crabmeat on sauce & garnish with parsley flakes. Serve with Ritz crackers.

Takes about 5 minutes to put together .. and is always a hit!

SPINACH DIP

1 (10 oz.) pkg. frozen chopped spinach, cooked & drained
2 sm. thin scallions, chopped fine
2 lg. eggs, hard cooked & chopped fine
1/3 c. mayonnaise
1/3 c. sour cream
2 scant tbsp. fresh lemon juice
1 tbsp. Dijon mustard
1/2 tsp. Tabasco sauce
Dip size Fritos or tortilla chips

Mix mayonnaise, sour cream, lemon juice, mustard and Tabasco in medium bowl until smooth. Stir in spinach, scallions and eggs. Cover tightly and chill several hours. Serve with dip-size Fritos or tortilla chips. Yield: 2 cups.

This is fun!
Beer Boil

2 pounds of large shrimp (don't shell them)
2-3 cans beer (any kind)
water
1 pound kielbasa sausage
crab (king crab is best)
shrimp and crab boil (in any supermarket)

Slice the kielbasa into serving pieces. Wash the shrimp in cold water.

In a large pot, bring to a boil the beer, shrimp boil, and enough water to cover shrimp, etc.
Add crab and sausage. Cook 5 minutes. Add shrimp and cook until shrimp turns pink. Dump into a big pot. Use your fingers!!! Serve with melted butter, Gold Dipt cocktail sauce, and spicy mustard. Add frozen corn with the shrimp, if you like corn.

Here's my no fail, always asked-for nacho dip. When it's heated through, put it on warm or low, or unplug for a short time if it's too hot. Everyone raves about this:

1 1/2 pounds ground beef, browned
1 can cream mushroom soup
1/4 cup butter
2 lb Velveeta, cubed
2 cups Pace Chunky Salsa, (medium is our favorite, mild or hot if you like)
3 Tbsp Chili Powder

Put all into crock pot. Cook on low 1-1 1/2 hours, stirring occasionally. Serve with tortilla chips. Yummy!

This is the newest addition. The author says your guests will lick the bowl. With an endorsement like that, how can I pass up trying this one?

Hassayampa Casserole
1 large onion, chopped
1 tablespoon olive oil
1/2 teaspoon cinnamon
3 teaspoons chili powder
3 teaspoons cumin
1 (8 ounce) can enchilada sauce
1 pound fresh tomatoes, diced
10 ounces frozen corn, thawed
1 cup sliced black olives
3 large roasted green chilies, chopped
1 pound shrimp or imitation crabmeat
12 ounces Monterey jack cheese, shredded
12 corn tortillas
Sauté onion in oil and add cinnamon, chili powder and cumin. Stir in enchilada sauce and diced tomatoes. Set aside 1 cup sauce. Add to remaining sauce the corn, olives, green chilies, shrimp or crabmeat and 1 cup cheese.
In a 3-quart shallow casserole dish, cover bottom with some of the tortillas. Spread 1/3 of shrimp/crabmeat mixture over tortillas; repeat with 2 more layers. Top with remaining tortillas, sauce and cheese. Bake at 325 degrees F for 40 minutes.

My son is coming to dinner tomorrow. He wants something mexican. I will have about 4 hours to spend, if needed.
We are tired of the same old recipes. Something new…PLEASE!
Beef preferred!

Pollo con queso en tortilla

1/2 cup shortening
1 teaspoon salt
3/4 cup water
1 can cream of chicken soup
4 ounce can green chilies, chopped
2 cup grated monterey jack cheese
2 cup flour
3/4 teaspoon baking powder
4 cup cooked chicken, cut up
1 cup dairy sour cream
1/2 cup onion, finely chopped
1/4 cup sliced green onions with tops

Mix together flour, salt and baking powder.
Cut in shortening until mixture resembles fine crumbs.
Stir in water with fork, a little at a time, until dough leaves side of bowl and can be handled.
Turn onto lightly floured surface and knead until smooth, 10 or 12 times.
Cover and let stand about 15 minutes.
Roll dough into 20 by 13 inch rectangle.
Fold crossways into thirds and place in ungreased 11×7×1-1/2 inch baking dish. Unfold dough.
Spread chicken over dough, but not quite to ends.
Heat oven to 400 degrees. In 2 quart saucepan mix soup, sour cream, chilies and onion.
Heat over medium heat, stirring occasionally, until hot.
Pour over chicken. Sprinkle with cheese and green onions.
Fold dough over filling to center of dish. Pinch dough together at ends to seal. Cut slits in top.
Bake until crust is golden brown, 45 to 50 minutes.

Mexican Bean Pie

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans, drained
1 (16 ounce) can refried beans
1 (2 ounce) can sliced black olives
1/2 (15.25 ounce) can whole kernel corn, drained
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 tablespoon ground cumin
1 tablespoon chili powder
ground black pepper to taste
5 (10 inch) whole wheat tortillas
1 1/2 cups shredded Cheddar cheese
1/2 cup salsa (optional)
1/2 cup sour cream (optional)
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 inch round cake pan or springform pan. In a large saucepan over medium-high heat, mix black beans, pinto beans, refried beans, olives, corn, bell pepper, and jalapeno pepper. Season with cumin, chili power, and black pepper. Cook and stir until thickened, about 10 minutes. Lay one tortilla flat on the bottom of the prepared baking pan. Spread 1/4 of the bean mixture on the tortilla. Sprinkle 1/4 cup Cheddar cheese lightly over the bean mixture. Repeat layering, ending with a tortilla. Top with remaining Cheddar cheese. Bake 20 minutes in the preheated oven. Allow to cool slightly before serving. Serve with salsa and sour cream for garnish.

My family loves Mexican "lasagna" Brown 1 pound ground beef with onions, garlic and peppers. Add a can of Mexican style Ro-tel tomatoes. Add 1 packet of taco seasonings and chili powder to taste. layer as you would lasagna lasagna using corn tortillas instead of noodles and Mexican style grated cheese. Bake at 375 degrees until bubbly. remove from oven. Add Dollops of sour cream.

********Meat filled Crescent ring:

Ingredients:
2 packages crescent rolls
1 lb. ground beef
1 envelope taco seasoning
1 cup grated cheddar cheese
shredded lettuce
chopped tomatoes
one bunch of green onions, chopped
1 diced avocado
1 cup sour cream
salsa
Method:
Brown ground beef and follow taco seasoning directions on back of package.
Add the cheese and place aside for the time being.
Unroll the two packages of crescent roll.
On a cookie sheet, place the crescent roll wedges in a circle, wide side of wedge towards the middle, pointed end towards the outside.
Place the ground beef on the crescent rolls and wrap the pointed ends of the rolls around the meat mixture, so that it forms a ring.
Bake at 375 F for approximately 12 minutes.
When baked remove from oven and place on a large platter.
On the inside of the ring place lettuce, tomatoes, onions, and avocados.
Dollop sour cream and salsa over all.
Cut into wedges and serve warm.

**************TACO PIE
1 lb. hamburger
1 pkg. taco mix
Tomato sauce
Water
Kidney beans, drained
Cheddar cheese
Cream corn
Cornbread mix
1 egg and 1/4 c. milk
Frozen pie shell (optional)
Brown hamburger, drain. Add taco mix, tomato sauce, water, simmer. Add drained kidney beans. Pour into casserole or pie shell. Mix cornbread and stir 1/2 cream corn. Spread hamburger with 1) layer remaining cream corn 2) layer grated cheese 3) layer cornbread mixture.
Bake 350 degrees for 20 minutes.
