I need a simple quick mexican dessert that is easy to make! Here's the catch! I only have a microwave! (My fam. is having a remodeling project in kitchen!) Plz!!!!! i need help!!!!!!
We're having an easy Cinco de Mayo dinner tonight and I'm making this for dessert.
Use a toaster oven for this!
Mexican Tortilla Dessert
Ingredients:
Mix Cinnamon with White Sugar
Melted Butter
Soft tortillas
1. Brush melted butter on tortilla and sprinkle cinn/sgr mix on.
2. Roll tortilla, brush with butter and sprinkle mix again
3. Put in oven (regular or toaster oven) at 375 degrees for 5 minutes.
Should light, golden and crispy!

i'm doing a school project in spanish an we're supposed to make a food from mexico. i was thinking of making pan dulce. is it any good? doe anyone have a good recipe or it? or a recipe for another good mexican dessert?
MEXICAN SWEET BREAD (PAN DULCE)
1 (16 oz.) frozen bread dough
1/2 c. sugar
1/2 c. flour
1/4 c. melted butter
2 tbsp. slightly beaten egg
1/2 tsp. cinnamon
Let frozen bread dough thaw until pliable. Cut loaf into 16 pieces and shape into balls. Place balls on greased baking sheet, 2" apart. Flatten balls slightly with palm of your hand. Mix together sugar, flour, butter, egg and cinnamon. Spread 1 tablespoon topping on each bun. Let rise until double in size. Bake in 400 degree oven for 10 minutes or until lightly browned. Remove from pan to cool on rack. Makes 16 rolls.
OR
PAN DULCE'
4 c. flour
2 c. shortening
1/3 c. tea (use 1 stick if cinnamon to make tea)
1/2 tsp. dry yeast
1 tbsp. ground cinnamon
1/3 c. sugar
Put dry yeast in warm cinnamon tea. Beat shortening until fluffy. Add dry ingredients. Knead a little; add cinnamon tea. Roll and cut into any shape. Bake at 350 degrees until lightly brown. Roll hot cookies in cinnamon sugar.
OR
PAN DULCE (SWEET ROLLS)
3 1/2 to 4 c. all purpose flour
1 pkg. active dry yeast
1 c. milk
1/4 c. sugar
1/4 c. shortening
1 tsp. salt
2 eggs
2/3 c. all purpose flour
1/2 c. sugar
1/4 c. butter
2 beaten egg yolks
1/4 tsp. vanilla
In large bowl, combine 2 cups of the flour and yeast. In a saucepan heat milk, 1/4 cup sugar, shortening, and salt until warm (115 to 120), stirring constantly. Add whole eggs, and beat at low speed of electric mixer for 30 seconds scraping bowl. Beat 3 minutes at high speed. By hand stir in enough remaining flour (1 1/2 to 2 cups) to make moderately stiff dough. Knead dough on lightly floured surface 8 to 10 minutes or until smooth. Place in greased bowl; turn once to grease surface and cover bowl. Let rise 1 to 1 1/4 hours or until doubled in bulk, then punch down. Divide into 16 equal pieces. Shape into a smooth ball. Roll or pat each ball into a 3 inch circle. Place on a greased baking sheet 2 inches apart.
Combine the 2/3 cup flour and the 1/2 cup sugar. Cut in butter with pastry blender to make fine, even crumbs. With a fork, stir in egg yolk and vanilla. Mix with hands until well blended. Divide mixture into 16 different portions, and with a rolling pin, roll each to a 3 inch circle on a light floured surface. With a spatula transfer each circle to top of dough on baking sheet. Slash top into squares, circles, or shell forms. Cover and let rise about 30 minutes or until doubled in bulk. Bake in a 375 degree oven for 15 to 18 minutes. Makes 5 lbs.

I am invited to a Mexican dinner on Sunday…..love the food, but what could I bring to go with??
Oh my goodness, thanks for all those yummy answers.
I can give you some insigth.
We dont usually go for sweets after dinner, unless the family is very americanized. But if you must bring a dessert, consider mild Mexican sweet bread, like conchas or chilindrinas, nothing filled with jelly please, that is breakfast only. Flan is also a favorite but its really something that is home made with milk and caramel, storebougth is just yellow gelatin. The thing that would really go well with your hosts is if you bring dinner bread like bolillos or teleras from an authentic Mexican bakery, the Mex versions of dinner rolls.

We ate at a local restaurant today and they had this "apple salad" that was pretty good.
It contained:
Apples
Walnuts
Raisins
Coconut
and some sort of "sweet sauce" that was kind of creamy and a taste of something like rum or some sort of alcohol in it.
Does anyone know what this was or where I can get a recipe??
It's called "Ensalada Navideña", which is Christmas Salad. It is deliscious!!!
Ensalada Navideña:
1 cup sour cream
1/2 teaspoon salt
1- 14 oz. can crushed pinapple drained, liquid reserved
4 Granny Smith apples, cored and cut in cubes
1 cup pecans
1 cup shredded coconut
1 cup raisins
In medium mixing bowl, whisk together sour cream, salt and enough reserved pineapple liquid to make mixture smooth and creamy. Stir in remaining ingredients. Enjoy!
*Add a splash of rum if you like!!!

Flan….custard with a caramel coating.
Capirotada …bread layered with peanuts, coconut, bananas, raisins, and condensed milk.
alfajor de coco (really a candy). I love it.
rice pudding
pastel de tres leches (verrrry popular) yellow cake infused with evaporated and condensed milk, and topped with whipped cream. Many flavors.
Churros con cajeta o chocolate. Kind of like a fried cruller sometimes with a filling.
Paletas (ice cream or fruit bars)
Pastel de pacanas..pecan cake.

it has granola, fruit, raisins, and some white creamy stuff>> how do you make the creamy stuff?? i've looked all over!!!!
Mix sugar into regular sour cream until it's as sweet as you like it. Fold in the fruit and sprinkle the raisins and granola over the top.

A few years ago, I had this really tastey dessert at a Mexican restaurant. I am unsure of the name, but I believe it starts with an "S."
It was basically a fried tortia, with strawberries and whipped cream. And I believe it also had cinniman sprinkled on it.
Does anybody know what this dessert is called? Even better, if u could supply me with a recipe, u'll get chosen as the best answer.

It may have been this.
Strawberry Sopaipillas
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoons shortening
1 cup purified warm water
vegetable oil for frying
10x sugar
Directions
In a bowl, stir flowr, baking powder and salt together.
Cut in shortening
Work in warm water
Turn dough lightly onto floured surface.
Cover with a damp cloth.
Let sit one hour.
Divide dough into 2 equal pieces.
Roll out to 1/2" to 3/4" thick .
Cut 2" to 4" long strips of dough.
Fry strips in 1-1/2" of 425 degree oil, turning once unitl both sides are lightly browned.
Drain on paper towels.
Dust with 10x sugar
For dipping use honey butter, melted chocolate, warmed strawberry jam, or caramel.
TO DIE FOR!!!!

Throw Together Mexican Casserole
1 pound ground beef
1 (15 ounce) can sweet corn, drained
1 cup mild, chunky salsa
1/4 cup sliced black olives
3 1/2 cups cooked egg noodles
1 (15.25 ounce) can kidney beans, drained and rinsed
1/4 cup taco sauce
1 (1.25 ounce) package taco seasoning mix
1/2 cup tomato sauce
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a skillet over medium heat, cook the ground beef until evenly brown; drain.
3. In a 9×13 inch baking dish combine the beef, corn, salsa, olives, cooked noodles, beans, taco sauce, seasoning mix and tomato sauce.
4. Bake in the preheated oven for 1/2 hour, or until cooked through.
