Easy to make mexican food and drink?

Everybody thinks I cant cook , I want to prove them wrong!
Im moving home and as a low budget celebration Im going to invite a handful of people round and have a little mexican meal.
All I can think of is tequila based drinks , tortilla chips and dips .. some sort of wraps.. help ! it needs to be more exciting!

Spanish Rice, Enchiladas, Re-fried Beans, Guacamole, Mexican Stew, Tacos. You could look at a Mexican Menu on-line and have had your answer right away.

How can i make an easy mexican mayo?

There are a few ways to do that:

If you’re looking for a "southwest type sauce" (like Carl’s Jr. uses on their Southwest Burger items, it’s as simple as taking 1 cup of mayo and adding a taco seasoning (available in the grocery spice aisle, where the packaged gravies are located)

I live in Southern California, and both Best Foods and Kraft have a Mayo con Lima (mayo with lime) but it’s only available in certain market areas.

You can also make your own by adding to one cup (8 oz) of mayo:

Ground Cumin
Ground Coriander seed (that’s from where cilantro comes)
Cayenne pepper
Lime/Lemon juice

As far as proportions, this is an "experimentation" of YOUR particular taste. The "a little of this, a little of that" comes into play here. Just remember to WRITE down what/what proportions you made it with, or be beleaguered by guests who wanted the "recipe" that really only exists in your head (this happened to me 2 years ago T”giving, I made some Balsamic Bacon Brussels Sprouts……They were the RAVE, but I didn’t write down ANYTHING………Oppps…….

Don’t skimp on the small details. Don’t know how to cook.

Can it be made from minute rice or long grain rice?
I guess I didn’t explain myself clearly.

JUST MEXICAN RICE.
Just rice….how to make mexican rice.

this is the easiest recipe and you can use either rice.
If using Long grain add more broth as per directions on box,,this recipe is for instant rice.
.Ingredients
2 tbs veg oil
2/3 cup uncooked instant rice
2/3 cup chicken broth
1/4 cup chopped green pepper
2 tablespoons chopped celery
2 tablespoons chopped onion
1/8 teaspoon minced garlic
2 tablespoons water
1/2 cup salsa
1/4 teaspoon salt
1/8 teaspoon chili powder
1/8 tsp cumin
1/8 teaspoon pepper
Directions
1.In a skillet, saute in oil green pepper, celery, onion and garlic and rice until rice is light brown.. Add the salsa, Broth , salt if desired, chili powder, pepper, cumin and Cook until liquid is absorbed.

Any easy Mexican foods too cook for class?

For Spanish 1 me and my group have to cook something Mexican. I’m not Mexican, I’m Puerto Rican/Peruvian, so I don’t know any Mexican foods to make and I never really took the time to tell Mexican food from South American apart.

Are there any easy Mexican foods to make? And it has to taste good please & thank you.

apple pie empanadas
take a "Grands" refrigerator biscuit and pat it out kinda flat…add 2 tsp of apple pie filling…fold over and crimp the edges with a fork…sprinkle with cinnamon…bake until golden brown…like little fried pies!

I made about 50 of these one night for the junior high spanish club…it was fun and they were a tremendous hit

burritos are always a winner with kids! I use different meats, but they like regular spiced ground beef. 1 pound beef, 1 pound bag of dried pintos cooked, 1 med onion diced, 1 pound cheese, 1-2 cups of cooked rice, chili or other spices, about 3 dozen flour tortillas. (if you want to save yourself from cooking the beans, look for the big bulk cans of pre-cooked pintos in the hispanic area of the store, or use 3 big cans of refried beans.)
Mash up the beans with some of the bean juice. Cook the meat with your favorite taco seasoning, add to the beans. shredd cheese into beans, add onion and rice. mix all this well, heat up flour tortillas and roll into burritos with both ends tucked. Cool the burritos the throw in freezer bags. Its cheaper than store bought, you know whats in them, and everyone loves them!
they take 1 1/2-2 minutes to thaw in the microwave

Sometimes I lay them in a casserole dish and pour enchilada sauce over, top with more cheese and heat in the oven-home made encheritos

Flan is a traditional mexican custard. Here is a link to several recipes for it. You can change the number of servings to how ever many you need and it will change the measurements for you.

Also, Chicken enchilades and mexican soup would be a good idea.

Enchilades:

Sauce:

sour cream, chicken broth, monterey jack cheese, green chiles (you can use rotel instead if you want tomatoes in it).

Heat broth of med. heat and stir in sour cream. When this gets creamy, add the cheese and chiles. Stir until cheese melts. Remove from heat.

Enchilades:

Spray bottom of casserole dish w/ pam.
Pour a bit of sauce in bottom of pan.
Layer flour tortillas.
Sauce.
Chicken (you can cook this yourself, OR use canned chicken to save time if you’d like- still tastes good)

Tortillas
chicken
sauce
tortillas
Etc…. Until you have enough layers (pan is full, etc…)
Top the final layer of tortillas with more sauce then sprinkle additional cheese on top.

Bake at 350 for 20 minutes (or until heated through).

Veggie Quesadillas

Recipe Ingredients:

6 Mission® Soft Wheat Flour Tortillas
4 Tbsp. Italian Dressing
1 large Red Onion diced
1 large Tomato diced
2 Anaheim Chiles seeded and diced
1 tsp. Chile Powder
1/4 cup Cilantro chopped
3 cups Jalapeño Monterey Jack Cheese grated
Salsa, Guacamole and Sour Cream
Recipe Instructions:

1. Combine 1/2 of the Italian dressing, onion, tomato, chilies and chili powder in a microwave proof bowl or casserole.

2. Microwave at full power, uncovered, for 4 minutes or until vegetables are tender and mixture is thickened, stir in cilantro. Sprinkle 1/2 cup cheese on 1/2 of each tortilla and top with 3 tablespoons vegetable mixture.

3. Fold tortillas in half and brush with remaining Italian dressing. Place 3 filled tortillas on a wax paper lined plate and microwave on High for 1 minute or until cheese is melted; repeat with remaining tortillas.

4. Cut each quesadilla into thirds. Garnish with salsa, guacamole and sour cream if desired; serve immediately.

Mexican Holiday Spirals

Recipe Ingredients:

3/4 cup Sour Cream
1/4 cup finely chopped Red Pepper
1 Tbsp. Dill Weed
1 tsp. Onion Salt
4 Mission® Flour Tortillas Soft Taco Size
8 slices Deli-Thin Swiss Cheese
1 pkg. (12 oz.) Smoked Cooked Ham

Recipe Instructions:

1. Mix sour cream, red pepper, dill and onion salt until well blended.

2. Spread 1/4 cup sour cream mixture over each tortilla. Top each with 2 cheese slices and 4 ham slices.

3. Roll tortillas up tightly. Refrigerate 30 minutes. Cut into 1-inch slices.

Recipe Ingredients:

1 pkg. Lawry’s® Taco Seasoning Mix divided
1 cup Sour Cream
16 oz. can Refried Beans
15 oz. can Black Beans drained
1 medium Tomato chopped
1 small can sliced Olives drained
1 cup Cheddar Cheese shredded
1 large Avocado peeled, seeded and chopped
1/4 cup Scallions or Green Onions thinly sliced
Salsa
Cilantro Sprigs for garnish
6 Mission® Soft Taco Size Flour Tortillas
Recipe Instructions:

1. In a small bowl, mix together 2 teaspoons Taco Seasonings with sour cream; set aside. In a medium bowl, mix together remaining Taco Seasonings with refried beans; set aside.

2. To make two tortes, place 2 tortillas on two separate plates. Top each tortilla with 1/4 of refried beans, black beans, tomatoes, olives, cheese, avocado, sour cream, and green onion, making sure to spread toppings toward the outer edge of tortilla. Repeat layer ending with a tortilla. Wrap both tortes with plastic wrap and refrigerate until ready to serve.

3. When ready to serve, slice into wedges with serrated blade knife. Spoon salsa over wedges and garnish with a sprig of cilantro, if desired.

Is it really easy for a Mexican to employ people from the USA?

I’m Mexican, I’m 25, and I’m self-employed. I live in the border, and I started teaching English at 18. I was so good, by 21, I was teaching managers only. Today, I only teach Spanish to American managers working on the factories here at the border. I’m quite popular, I get a lot of business. I decided to only teach Spanish to managers while hiring other teachers to teach English for me. My 2 teachers aren’t the best ones, but they are both Anglo, and people seem to think they know what they are doing. My decision to teach only the upper management is starting to pay off. They keep telling about their wives, kids, friends, business partners who need to learn Spanish. The problem is that they are on the other side of the border. My visa only allows me to cross the border, not work over there. To get a work-visa a company needs to request me, but since already have a clientele, and I might employ Americans, I can request myself.

Should I try making a business in the USA?

If you can come over here legally, give it a shot, I have
no problem with legal immigration or having legal immigrants
work over here, I would say Welcome to the USA.
