Enchiladas
Brown/drain 1lb ground beef. Add 1 Tbls each cumino, chili powder, garlic powder, onion powder, achiote powder, and a dash of salt. Add 1 can of hot dog chili and mix ’til warm. Roll into warmed corn tortillas…20 count…you can warm them in the microwave for 30 sec’s to 1 minute to soften before filling w/ meat. Lay in 9 x 13 baking pan and cover with 1 large can of enchilada sauce, 8 oz of shredded cheddar or cubed Velveeta, and bake for 15 minutes at preheated 350 degrees. Serve with diced onions, black olives, sour cream and salsa, and sliced canned jalapenos for extra heat.

Churros
"These Mexican fritters are very common at fairs. In my border hometown, the line at this stand is always overwhelming. People wait hours in line just to get a taste of these churros. I have run across several recipes but this is the best one by far."
* 1 cup water
* 2 1/2 tablespoons white sugar
* 1/2 teaspoon salt
* 2 tablespoons vegetable oil
* 1 cup all-purpose flour
* 2 quarts oil for frying
* 1/2 cup white sugar, or to taste
* 1 teaspoon ground cinnamon
In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball. Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain on paper towels. Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

Platanutres (Fried Plantains Chips)
6-7 green plantains
cinnamon sugar
oil for frying
Peel and finely slice the plantains, deep frying until golden and crispy.
Remove from skillet and drain while the plantain is hot. Sprinkle with cinnamon sugar to taste.
Note: Can be served accompanied by ketchup or another favorite dip.

Flan
1 3/4 cups whipping cream
1 cup milk (do not use low-fat or nonfat)
Pinch of salt
1/2 vanilla bean, split lengthwise
1 cup sugar
1/3 cup water
3 large eggs
2 large yolks
7 tablespoons sugar
Position rack in center of oven and preheat to 350°F. Combine cream, milk and salt in heavy medium saucepan. Scrape seeds from vanilla bean into cream mixture; add bean. Bring to simmer over medium heat. Remove from heat and let steep 30 minutes.
Meanwhile, combine 1 cup sugar and 1/3 cup water in another heavy medium saucepan. Stir over low heat until sugar dissolves. Increase heat to high and cook without stirring until syrup turns deep amber, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 10 minutes. Quickly pour caramel into six 3/4-cup ramekins or custard cups. Using oven mitts as aid, immediately tilt each ramekin to coat sides. Set ramekins into 13x9x2-inch baking pan.
Whisk eggs, egg yolks and 7 tablespoons sugar in medium bowl just until blended. Gradually and gently whisk cream mixture into egg mixture without creating lots of foam. Pour custard through small sieve into prepared ramekins, dividing evenly (mixture will fill ramekins). Pour enough hot water into baking pan to come halfway up sides of ramekins.
Bake until centers of flans are gently set, about 40 minutes. Transfer flans to rack and cool. Chill until cold, about 2 hours. Cover and chill overnight. (Can be made 2 days ahead.)
To serve, run small sharp knife around flan to loosen. Turn over onto plate. Shake gently to release flan. Carefully lift off ramekin allowing caramel syrup to run over flan. Repeat with remaining flans and serve.

Mexican – Style Chicken
1 tablespoon chili powder
1 tablespoon sugar
1 teaspoon ground cumin
1 teaspoon dried oregano
1/teaspoon salt
1 cup picante sauce
1 (5.5-ounce) can spicy-hot vegetable juice
1/4 cup water Cooking spray
4 chicken drumsticks, skinned
4 chicken thighs, skinned
1/4 4 cup thinly sliced green bell pepper
1 cup thinly sliced onion
1. Combine first 5 ingredients in a small bowl; mix well. Combine picante
sauce, vegetable juice, and water in a separate bowl.
2. Heat a large nonstick skillet coated with cooking spray over medium-high
heat. Add chicken; sprinkle evenly with chili powder mixture. Top with bell
pepper and onion. Drizzle with picante sauce mixture. Bring to a boil;
cover, reduce heat, and simmer 40 min utes or until chicken is no longer
pink in the center, stirring occa sionally.
