Mexican Food Recipe
hello,i was wondering what this was my cousen made it and it was good but i forgot to ask what it was called it was like a tortilla with bologna in the middle and melted cheese on both sides.i dont know if it was a mexican food but im just wondering if you guys know what its called or how to make it?
It sounds like a wrap or quesadilla. For a wrap, take your favorite kind of meat, cheese and veggies and put on a tortilla that is spread with a little ranch dressing or mayo. Roll it up starting on one side, then eat.
For a quesadilla, put your fillings on top of one tortilla in a greased pan. Add the other tortilla. Cook until heated on one side, then turn. Cut into 4-6 pieces and enjoy!

Hi: I found this on the web. I use it all the time.
Easy Guacamole Recipe
* 2 ripe avocados
* 1 small onion
* 1 clove garlic
* 1 small tomato
* 1 1/2 Tbsp lime juice (or juice of 1 fresh lime)
* salt and pepper to taste
Peel avocados and remove the pit (see below for a neat idea on how to use the pits)
Peel and mince the onion and the garlic
Chop the tomato.
Mash the avocado in a bowl (fun for the kids) and then stir in the remaining ingredients.
Serve cold with tortillas or as a side dish on salad greens.

Spinchilada’s
1 bunch of fresh spinach (or bag)
12 small corn tort.s
enchilada sauce (I use the package mix)
8 oz sharp cheddar
8 oz monterey Jack
8 oz cream cheese
1 medium onion
jalapenos
Shread the freash spinach. Chop onion, shred the cheese and jap.s, mix w/ hands.
Heat frying pan w/ 1/2" oil in bottom, dip corn torts 1 by 1 in medium/low heated oil. (this will soften them-easier to roll w/o cracking)
spread sauce on both sides of tort, fill and roll. Place in 9×12 cake pan. Bake @ 375′ for about 45 min.
Tell the kids it’s parsley, they’ll love it the first time, and not care if it’s spinach after that!

Does anyone know any good mexican recipes?
Grill some lightly seasoned thin steak or chicken… cut it into small pieces and wrap it in a corn tortilla. Top it with some pico de gallo and you have a really tasty authentic Mexican taco.
Quesadillas are simplistic too… Just cheese melted inside a flour tortilla. Just like a grilled cheese. Quesadillas are served at most taco stands and you can order quesadillas sencillo or combinado. Sencillos are filled only with cheese, and combinados are filled with cheese and your choice of taco meat: bistec (thin beef steak), chorizo (sausage), or pastor (spit cooked pork).
Pico De Gallo
1 onions, minced
3-4 tomatoes, diced very small
1-2 jalapeno pepper, minced
handful of cilantro, minced
the juice of 2-3 limes
salt and pepper, to taste
It is important to chop all the ingredients in small pieces. Combine first four ingredients and top with lime juice and spices and toss to coat. Serve with as a condiment for Mexican food, such as fajitas or as a filling for quesadillas.

Hello there mommys! I just thought I'd see how many of you liked Mexican food and share a fast recipe that I have made and loved for years!
Mexican Lasagna
Need
2 Bags of shredded cheese ( mexican flavored)
2 Eggs
1 Small container cottage cheese
8 Soft Tortillio Shells
1 lb ground beef
1 packet of Taco Seasoning (Taco Bell)
Any veggies you eat on Tacos ie: tomatoes, lettuce, olives
Spray 9×12 baking pan
Layer 4 tortillo shells on bottom of pan. They will overlap. No worries.
Fry your ground hamburg and add seasoning. Turn off the meat once done & seasoned. Mix 1/2 – 3/4 bag of shredded cheese to meat.
Add meat mixture ontop tortillo shells.
Layer 4 more tortillo shells on top.
In seperate bowl crack eggs & add 1/2 of the container of cottage chees. Mix together well. Add handful of cheese. (Looks sort of lumpy but makes an awesome cheese sauce) Spead over last layer of tortillos. Cook 350 for 30 minutes. Pull out and add veggies to top!

Sorry – Flour tortillo soft shells. They bake softer.
I don't eat meat but I'd totally make this for my family. Once question: do you use corn or flour tortillas?

I've lost my copy. This recipe used piloncillo while most recipes I've found online use brown sugar. This would have appeared in an issue from probably 2000-2001. I have tried searching the foodandwine.com database without success.
MEXICAN CHOCOLATE BROWNIES
1 c. cocoa
3/4 c. butter, melted
1 1/4 c. all purpose flour
1/2 tsp. salt
3 c. granulated sugar
7 eggs, lightly beaten
1 tbsp. vanilla extract
2 1/2 tsp. ground cinnamon
1 tsp. freshly ground black pepper
Preheat oven to 350 degrees. In a small bowl, combine cocoa with butter, stirring until smooth. In a large mixing bowl, combine flour, salt, and sugar. Stir in cocoa mixture. Blend in eggs, vanilla, cinnamon, and pepper. Pour into lightly greased 13 x 9 x 2 inch baking pan and bake 35-40 minutes or until center is set. Makes about 24 brownies.
