im looking for good recipies using rum and maybe blended.. any help will be appreciated

The Outrigger Cocktail
1 can (46 ounces) unsweetened pineapple juice
2/3 cup fresh squeezed lime juice
1/3 cup superfine sugar
cracked ice
Garnish: fresh pineapple spear and lime slices

Stir together pineapple juice, lime juice and sugar. Pour mixture into ice-filled glasses. Add pineapple spear and garnish with a float of sliced lime. Optional: Add 2/3 cup light rum. Makes 1 1/2 quarts.

Bacardi Cocktail
2 oz. light rum
2 oz. sour mix
1/2 oz. grenadine
shake, strain into cocktail glass

The Rumba

1 part Tia Maria
1 part rum

Stir gently, chill briefly and serve in cocktail glass

Mexican Stuffed Pizza

I changed a few ingredients, and it came out good, but too similar to another recipe I just made, so if I make this again, I’ll stick to the instructions.

ex.
name: tacos
they are made of:
1. tortillas
2. cheese
3. chicken
4. taco sauce
5. lettuce

PAELLA (serves 6)

1/3 cup of Olive Oil
1 Small Onion, minced
2-3 cloves of garlic, crushed
3-5 tbsps minced fresh parsley
1 generous pinch of saffron
2 tbsps of chicken bullion
3 skinless Chicken Breasts, cut in large chunks
2 green peppers, sliced
1 red pepper, sliced
1 tsp of yellow food coloring (optional — saffron is very expensive, a pinch
of it is all you need for taste but a richer color is desired)
8 oz tomatoe sauce
1 tsp sugar
4 cups of rice
7 cups of water
salt
1/2 lb – 1 lb shrimp, leave shell on
1 lb scallops

Saute onion, parsley, and garlic in olive oil until the onion begins to become transparent. Add saffron, chicken bullion, chicken, peppers and saute until chicken has become white. Add tomatoe sauce, sugar, food coloring. Stir. Add rice & water and bring to boil. Salt to taste. Boil 5 minutes, stirring occasionally. Add shrimp & scallops, boil an additional 5 minutes, stirring occasionally. Simmer 10 minutes covered, stirring occasionally. If the rice appears to be getting too dry during the last 10 minutes, add more water. If the rice is too wet at the end of the 10 minutes, uncover and evaporate unwanted liquid.

CHURROS

Vegetable or Olive Oil
1 cup water
1/2 cup margarine or butter
1/4 teaspoon salt
1 cup all-purpose flour
3 eggs
1/4 cup sugar
1/4 teaspoon ground cinnamon (optional)

Prepare to fry the churros by heating oil in a pan (1 to 1&1/2 inches) to 360 degrees F.

To make churro dough, heat water, margarine and salt to rolling boil in 3-quart saucepan; stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Beat eggs all at once; continue beating until smooth and then add to saucepan while stirring mixture.

Spoon mixture into cake decorators’ tube with large star tip (like the kind use to decorate cakes). Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden brown, turning once, about 2 minutes on each side. Drain on paper towels. (Mix Sugar and the optional cinnamon); roll churros in sugar or dump the sugar on the pile of churros, like the pros. That churro taste will take you right back to your favorite summer days walking the paseos of Spain.

Note: REAL churros in Spain are made without cinnamon mixed with the sugar, but the cinnamon adds an extra nice flavor

me and my boyfriend love spicy foods. does anyone know of any good mexican dishes. main dishes or side dishes. how do u make mexican corn?? we love chicken.. my step mom makes this dish with boiled potatoes and tomatoes.. does anyone know what im talking about?… were not a big fan of onions though.

MEXICAN CORN

1/4 c. butter, melted
2 c. fresh or frozen corn kernels
1/4 c. chopped green pepper
1/4 c. chopped red pepper
1 tsp. salt
1 c. commercial French fried onions
1 c. cubed fresh tomatoes
1/4 tsp. ground oregano

Combine first 5 ingredients in a heavy skillet. Cover and cook over medium heat 7 minutes, stirring occasionally. Stir in French fried onions, tomatoes, and oregano. Cook, uncovered, for 2 minutes or until tomatoes are thoroughly heated. Great with Mexican main dishes!

MEXICAN HAMBURGERS (CHULETAS)

Salsa Fria:

1 10 oz can diced tomatoes with green chiles
1 tablespoon olive oil
1 tablespoon wine vinegar

Chuletas:

2 cups Saltines, finely crushed
3 tablespoons fresh parsley, chopped
1 cup Vidalia onions, chopped
1/2 tsp garlic powder (not salt)
1 lb ground chuck (beef)
1 egg
1 tsp salt
1 tsp chili powder
1 cup oil (for frying)

Garnish:

Rings of red onion, slices of avocado, sour cream and sprigs of cilantro

Combine all Salsa Fria ingredients. Refrigerate for at least one hour.
On a sheet of wax paper, evenly spread cracker crumbs. Combine parsley, onions, ground meat, garlic powder, egg, chili powder and salt in a small bowl. Form 4 patties and coat each pattie with the cracker crumbs evenly. Cover and refrigerate for at least 1 hour (but no more than 3 hours) to thoroughly chill.

Heat oil until it is hot enough to brown a 1 inch cube of bread in a little over 1 minute. (Don't get oil too hot or center of patties won't cook through). Fry patties in oil well browned on outside and cooked through. Drain on paper towels.

Serve on a bed of iceberg lettuce with a few rings of red onion, topped with Salsa Fria and with a dollop of sour cream with a sprig of cilantro to the side and a slice of avocado.

Flamin' Tortilla Pie

Ingredients:
1 tsp. olive oil
1 small onion, chopped
4 large garlic cloves, minced.
1 Tbsp. ground cumin
2 tsp. chili powder
1 ¼ pound lean ground beef
1- 15oz. can red kidney beans, rinsed & drained
1- 16oz. can diced peeled tomatoes with juice
½ cup mexican salsa, hot
6 corn tortillas, cut in wedges, divided
1 cup packed Pepper Jack Cheese, grated

Directions:
Place the oven rack in the lower middle position,( second knotch up). Pre-heat to 350 degrees. Heat oil in a large, non-stick skillet over medium-high setting, add onion, garlic & sauté 5 minutes until soft. Add cumin & chili powder & stir (hold your nose). Add ground beef and cook for 6-7 minutes, stirring. Pour into a large strainer until fat drains. Return mixture to skillet; add beans, tomatoes, and salsa. Simmer 5-6 minutes until slightly thickened.

Spread half the beef mixture in a 9” deep-dish pie plate. Arrange half of the tortilla wedges over the beef mixture. Sprinkle ½ the cheese. Repeat layers again.
Bake until cheese melts and pie is heated throughout (about 30minutes). Let cool 5 minutes before serving. It won't matter.

what are some good traditional mexican recipies without meat?

refried beans (use vegetable oil and or butter instead of lard, it doesn't have as rich of a taste but with the right seasonings, they are awesome)
cheese enchiladas (if not vegan)
veggie enchiladas with red or green sauce
veggie or cheese quesedillas
stuffed peppers ( use rice and veggies in red sauce)
veggie/tofu tacos or burritos

It's easy to do, just leave out the meat and use sturdy veggies like squash and carrots or crumbled veggie burger and if the recipe calls for meat stock/broth, use veggie instead. I cook for my sister all the time. I even find myself not wanting meat quite often and cook for my children and myself.
