here is the part I’m not sure about…
Soy American or cheddar cheese melted with some tomato sauce mixed with a taco or chili seasoning blend ( I make my own delicious blends) Poured over the top and finally, topped with dairy free ranch dressing
Do you think it would work? Would you change anything? Maybe a better way to add the seasoning blend to the salad?
I would use a bed of shredded lettuce and in a pan sautee the onions, beans, along with diced tomatos, and green chiles with a package of taco season mixed in. Let simmer, drain slightly and pour over lettuce, then top with crushed chips, and soy cheddar.

I have four bbq chicken plates leftover. Each plates contains: half bbq chicken. mexican beans, spanish rice and potato salad w/2 pieces of bread and 1 whole,cooked jalepeno. Any ideas besides a chix mex rice soup? Maybe a recipe using my ingredients as some sort of filling??
Chicken/pesto Pasta
Saute brown onion and garlic in a frying pan
then add some chopped red capsicum saute.
remove from heat.
add a small jar of basil pesto and some pine nuts
cook and drain penne pasta/or spirals as directed on pack.
add pasta to the onion/basil mix
stir through then add a drained jar of pitted kalamatta olives and the cooked chicken cubed add some good olive oil if needed.

Mexican Salad Recipe
I am visiting my dad soon and they are stuck in the same recipies they have been for twenty yrs so want to serve some interesting meals. Would this idea basically work for a version of rice n beans?
Sautee some onion, garlic, hot sauce and spice with kilbassa (sp) is sausage
remove sausage once cooked and cut into small 1/4" pieces and add back
Add a can of black or kidney beans
One diced tomato
about a cup of salsa and one can of mexican rice and enough water so to simmer
Simmer for about 10 minutes
Serve with a side salad and chips/cornbread
Any suggestions appreciated!!!!!

Red Beans and Rice
Ingredients
2 cups red beans
1 onion, diced
2 cloves garlic
2 teaspoons seasoning salt
red pepper
smoked sausage, sliced
cooked rice
Directions
1Wash beans,
2Cover beans and all ingredients with cold water.
3Bring to a boil, reduce heat and simmer until done.
4Serve over rice.

Mexican Salad Recipe
Hi. I want to make this "taco ring" recipe.
This is a pampered chef recipe that looks pretty and is super easy to make. This recipe makes 16 rolls. Also if you dont want to try and get the shape right you can also use a 9X13 and do a single flat layer of crescent rolls, then the meat mixture and then a layer of crescent rolls. To serve cut into squares. Not as pretty but you may find it more simple to do.
Ingredients:
3/4 lb lean ground beef or turkey
1 (1 1/4 ounce) package taco seasoning mix
1 cup shredded Mexican cheese (4oz.)
2 tablespoons water
2 (8 ounce) packages refrigerated crescent dinner rolls
1 medium bell pepper
1 cup salsa
3 cups lettuce, shredded
1 medium tomato
1/2 cup pitted ripe olives (optional)
sour cream (optional)
Directions:
Cook ground turkey/beef in large skillet over medium heat 7-9 minutes or until it's no longer pink; drain.
Stir in taco seasoning mix, cheese and water.
Preheat oven to 375 degrees.
Unroll crescent dough;separate into triangles.6
Arrange triangles in a circle on Classic Round Pizza Stone with wide ends overlapping in center and points toward outside.
(There should be a 5 inch diameter opening in center.)
Scoop meat mixture evenly onto widest end of each triangles up over filling and tuck under wide ends of dough at center of ring.
(Filling will not be completely covered).
Bake at 20-25 minutes or until golden brown.
Shred Lettuce,and chop tomato,onion,and olives,and bell pepper if desired.
If you want to do something fancy, scoop out a bell pepper and fill with salsa and put into center of ring.
Add your toppings to top of ring and finish with more shredded cheese and sour cream.
This is great with a salad.
It says to cook it on a "classic round pizza stone". Do you think I could just cook it on a pan or do you have any suggestions on what to use? Otherwise, although i'd rather have an answer to my first question, is there a common store I could get a pizza stone at (something like target or kohls or something, although neither of them have one in stores). Thanks.
You don't need a pizza stone. A cookie sheet or a 9 x 13 should work.
One of the advantages of a pizza stone is the ability for it to hold heat. This is acheived by preheating the stone in the oven.
However, the recipe is using the stone as a baking sheet so any benefits are in some respects minimized.
That's why you don't really need a pizza stone.
You can find pizza stones in most stores… Wal-Mart, Target, Kohl's… prices average around $20.

Buffalo Chicken Dip: (serves 20)
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as FranksĀ® Red HotĀ®
1 1/2 cups shredded Cheddar cheese
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly.
You can serve with either crackers, or nachos! Yummy!

Mexican Salad Recipe
I'm looking for a chicken dish that is served cold but taco-style. I'm pretty sure that part of the recipe was sour cream. I had it years ago and never got the recipe. Every search combination I've tried has brought nothing but salads, dips or hot dishes. Please help! Thanks!
I have had something kind of like it…not sure if it is the same..
2 cupsCooled&Diced grilled chicken breast…2 cups of sour cream mixed with 1 pack of taco seasoning…it was served on lettuce & diced tomatoes on a fried flour tort…I revised it a little and added the diced tomatoes and green onions to the chicken sour cream mixture.

my husband and i are kinda meat and potatoes people! we dont care for pastas and seafood, not to much into veggies either! But we do love salads! so any recipe ideas?! we LOVE mexican food! but i can never get the rice just right. OH and nothing weird like lamb or goat or what! stick to beef, chicken, and pork! THANKS in advance, 10 points for best answer!
you probably already make this, but it's always been a favorite summer dinner in our family….
TACO SALAD
1 can kidney or pinto beans, drained
1/2 – 1 head iceberg lettuce, shredded
8 oz. shredded cheese (I like mixed Mexican cheeses best)
2-3 chopped tomatoes
1/2 sliced onion
chopped cilantro
sliced avocado(s)
sliced black olives
3-4 handfuls crunched up tortilla chips (good way to use the ones in the bottom of the bag)
1 small jar/container salsa
Just toss it all together and enjoy! …. I know people who also add 1 lb. browned ground beef to it, but I don't like the hot meat in a cold salad….

Mexican Salad Recipe
I am a very picky eater. I don't like salads or sandwhiches. I like whole hearty meals. My In-law's love anything but I don't want to serve up some lasagna on a 90 degree day. We all agree on any kind of mexican dish. Italian is good and so is Chinese. Is there any kind of meal that can be prepared and not be so "heavy". Any suggestions?
