i have a bunch of pork loin chops bone in and would like to grill them and have rice (the kind with tomatoes & stuff in it), beans & cheese, salad,avacado slices & tortillas.might someone typically use pork loin chops bone in to grill for a plate like this? what seasonings should i use? thanks

Since you have pork, why dont' you chop it up into big chunks and make "chile verde"… just brown your pork in a large skillet with salt & pepper. Boil or broil 3 large fresh jalapenos & about 8 large tomatillos (they're the green tomatoe looking veggies with a husk on them), put them in a blender with a garlic clve, piece of onion, cilantro and S&P, add to your cooking pork and simmer for another 20 minutes.
Side dishes, rice & beans & some warm corn tortillas.
They're going to love it! good luck.

Does anyone have any good white fish recipes?

I’m probably going to be making talapia and I want something that’s light. I was thinking if anyone has a good Mexican recipe for it (not fish tacos please and no ceviche since I’m pregnant). It’s going to be served with a tomato, cilantro and onion salad. So, something that’s complimentary.

how about poached mexican talapia served cold or warm over your salad

Poaching: cooking aromatic liquid over medium heat ( not boiling)

broth for poaching

1 quart of water

1 lemon squeeze juice into pan you are going to poach in
1 cup white wine
1 onion chopped rough
1 carrot chopped rough
1 celery stock chopped rough
2 tomatoes chopped
3 tsp chili powder
chopped cilantro

bring to boil reduce heat so that the liquid just has a small slow boil,

add talapia

cook for 4-7 minutes
serving cold
remove pot from stove and place in fridge and cool ( you could do this the day before or early the day you are going to serve. dry
flake over salad.
Serving warm
gentle remove fish from hot liquid.
place on paper towel and pat

Remove fish from liquid and lightly flake over salad.

I need the recipe for the cheddar chipotle burger on the July 2008 cover of Bon Appetit Grilling issue?

Its a burger with a slick slab of cheddar cheese on an english muffin bun. The burger has some type of balsamic onions and chipotle ketchup. Does anyone have the exact recipe?

I'd also like the recipe for the Mexican tomato salad that is featured with it if you have it. Thank you!!!
I cannot find the recipe online, Bon Appetit, Epicurious or anywhere. There are a million burger recipes on those sights, but not this one.

I really hope someone will post the recipe I have requested.

Grilled Cheddar Burgers with
Green Chiles & Grilled Red Onions

2 pounds ground sirloin
1 tsp salt
1 tsp ground black pepper
1 tsp chipotle chile powder
1 tsp garlic powder
1/2 tsp paprika
6 Ciabbata Roles
6 – 12 Slices sharp cheddar cheese
1 large red onion
Olive Oil
Romaine Lettuce
2 – 7 oz cans whole green chiles
Mayonnaise

Mix the salt, pepper, chile & garlic powders
and paprika. Set aside. Slice red onions about
1/2 inch thick, drizzle with olive oil.

Divide ground sirloin into 6 patties. Season
both sides spice mixture. Cover with plastic wrap,
set out for 20 minutes.

Start your grill,heat for 15 minutes.

When grill is hot, place burgers on grill.
Cook 4-5 minutes, rotating half way through
cook time to get grill marks. Flip burger, cook
another 4-5 minutes, rotating again. Cooked to
medium-rare. During last 2 minutes, put a piece
of the green chile on the buger & top with 1 or 2
cheese slices. Close lid on grill, allow cheese to melt.

When burgers are done, let rest 5 minutes on
serving platter.

Carefully place onion slices on grill after you
put the burgers on, cook 2-3 minutes per side.

During last minute, split ciabatta rolls
down middle, toast on grill, about 1 minute.

Spread mayo on each side of the bun, put lettuce
on bottom bun and the fantastic burger on the lettuce.

The recipe is on the cover of the brand new Bon Appetit July 2008 bbq magazine. It's a cheddar burger on an English muffin bun with chipotle ketchup and some type of balsamic marinated onions on it. I would like to have a copy of the exact recipe for that burger and the Mexican tomato salad side dish.

I cannot find this recipe at Epicurious or Bon Apptit.com. If anyone has it, can they please post it for me?

10 ounces ground sirloin or lean ground beef
1/3 cup finely chopped red onion
1/4 cup chopped fresh parsley
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated sharp cheddar cheese
2 large (4 1/2-inch-diameter) English muffins, split horizontally

PreparationPrepare barbecue (medium-high heat). Combine meat, onion, parsley, Worcestershire sauce, salt and pepper in medium bowl; blend well. Divide meat mixture into 2 equal portions. Shape each into ball. Poke deep hole in each ball and fill each with half of cheese. Mold meat around cheese to enclose. Flatten each filled burger to 3/4-inch-thick patty.
Grill burgers to desired doneness, about 5 minutes per side for medium. Grill muffin halves until beginning to color, about 1 minute per side. Serve burgers in muffins.

For vinaigrette
1/4 cup fresh lime juice
1 teaspoon salt
1 teaspoon sugar
freshly ground black pepper to taste
1/2 cup extra-virgin olive oil
4 pounds large vine-ripened tomatoes (about 8)
1 cup packed flat-leafed parsley leaves
1 cup packed coriander leaves
1/2 cup thinly sliced mint leaves
1/2 cup thinly sliced scallions PreparationMake vinaigrette:
In a small bowl whisk together lime juice, salt, sugar, and pepper and add oil in a stream, whisking.
Cut tomatoes into 1/2-inch-thick slices and arrange decoratively on a platter. Drizzle tomatoes with about two thirds vinaigrette.

In a bowl combine herbs and scallions and toss with remaining vinaigrette.

Mound herb mixture on top of tomato slices.

Hey there, Mexican food addict too, eh?? Me too, and I live in Southern California!!! I ate a salad in Cancun which had a light, creamy corn dressing on the top. Quite delicious. Must be Mexican or Mayan.

I used to only like the family recipe potato salad….UNTIL I had Juan Pollo (So Cal chain only I believe.) everyone I know loves this stuff. It has black olives, shredded carrots, but it is not just mayo….not sure if it is sour cream, mexican creme or what. So good, I hope there is someone who know the recipe! Thanks

I've searched everywhere but can't find the recipe. I think you may have to call the store. By law, they have to supply the ingredients if you ask them.

Spicy Avocado Salad
Yield: 8 Servings

2 Avocado; cut in half
1 Red onion; cut in slices
1 Tomato; cut in slices
Salt; to taste
1 Lime; cut in half
1 Jalapeno peppers; diced
Jalapeno pepper slices;
-optional
Fresh cilantro; chopped fine
Lettuce

Cut avocado in halves.

In a big bowl. Place sliced tomatoes, red onions, jalapeno peppers, and
lettuce.

Sprinkle with lime juice, salt and pepper. Toss.

Add avocado on top and a few more jalapeno pepper slices if desired. Toss
gently.

Serve.

I have a list of ingredients for a mexican recipe but i dont know what it is called. The ingredients are whip cream, sweet condensed milk, pineapple, pineapple juie, pecans and cream cheese. If anybody could find that recipe or the name of this that would be great. Or if anybody has any good mexican fruit salad recipes that would be good too. thanks

Fruit Salad (6 persons)
4 pieces of pineapple
9 carrots
1 orange
1 tangerine or mandarin
mint leaves
Cut the carrot in small pieces, then peel the orange and tangerine or mandarin and cut in small pices also the pineapple. (peeled carrot).
Vinaigrette Sauce
Juice of 3 oranges
3/4 cup olive oil
1/3 cup rice vinegar
3 tea spoon brown sugar
1/3 cup mint leaves
Salt to taste
In a large bowl put all the ingredients of the vinaigrette sauce together and blend. Then put the fruit and mixture.
