Easy Mexican Recipes for my spanish class?

We are going to have a Mexican food day in my Spanish class. I want a vegetarian recipe or a dessert if you don’t care. Something that isn’t to hard to make. Thanks Everyone!!!
Here’s a good one, that would be easy to bring:
Chocolate Mexican Wedding Cookies
Ingredients
1. 1 cup butter, softened
2. ⅓ cup powdered sugar
3. 2 teaspoons vanilla extract
4. 1 ¾ cups all-purpose flour
5. 3/4 cup ground pecans
6. ½ cup German sweet chocolate, grated
7. ¾ teaspoon ground cinnamon
8. 1 pinch salt
9. ½ cup powdered sugar
10. ¼ cup German sweet chocolate, grated
In a large bowl, blend the butter and ⅓ cup confectioner’s sugar until light and fluffy. Add the vanilla extract. In another bowl, combine the flour, ground pecans, ½ cup ground chocolate, cinnamon and salt; mix well. Gradually add the dry ingredients to the butter sugar mix. Wrap the dough in plastic wrap and chill 1 hour, or until firm.
Preheat oven to 325 degrees Fahrenheit. Shape the dough into 1-inch balls. Place the balls 1 inch apart on an ungreased cookie sheet. Bake for a few minutes, or until the cookies are firm. Cool 1 minute on the baking sheet, then transfer to a wire rack. For the coating, sift ½ cup of the powdered sugar and ¼ cup of the ground chocolate into a shallow bowl. While cookies are still warm, roll them in the sugar/chocolate mix.

Do a web search for AUTHENTIC MEXICAN RECIPES. I am sure you will find something that will work out for you and that you would be interested in having. Rice dishes are very easy

Easy — chips and guacamole Guacamole is just mashed up avocados and spices.

classic:
guacamole and chips.
for the guacamole, buy a few avocados, mash them up. and then mix diced tomatoes and a little bit of cilantro in it if you want. you can also put lemon juice in if you want, i would if i were you but it’s optional. then for chips just buy any kind of tortilla chips (i recommend the chips with a hint of lime, i forget the brand lol sorry)

This is a simple way to make a delicious Mexican recipe for
ENCHILADAS : get a smaller baking pan (as opposed to a roasting pan that would be too big ) and spray the pan with
non stick cooking spray. Open one can of Vegetarian refried beans
and spread them evenly on the bottom of the pan. Now take as
many frozen burritos that will fit snugly in the pan, be sure to use
just the bean with cheese or rice. Spread a bottle of Enchilada
Sauce all over the burritos. If you want to add some chopped black olives, or chopped onions or bell peppers to add for taste and
decoration that is fine. Place foil over the entire pan and bake for about 30 minutes in a 325 degree oven. When you take the pan out of the oven let it stand for about 5-10 minutes , take off the foil and spread shredded cheese liberally all over and watch it melt into a gooey goodness. Replace the foil until ready to cut and serve. P.S. most markets have Casio which is a white cheese from Mexico or you could use an already shredded cheese blended just for Mexican recipes with white and yellow cheese together in one package. Your friends will think you cooked for hours !! I hope this helped…and good luck !

you want something easy make a fruit salad with mango,papaya,pineapple,watermelon,cantaloupe,strawberries and just put a little bit of lime juice and some Chile powder the one that they put on fruit i think that is easy don’t you

Vegetarian? Mexicans are not so big on foods without meat. Anyway here is calabazas a la mexicana:
6 large zucchini
8-10 ripe plum tomatoes or 6 medium large regular tomatoes
one large white onion
olive oil
oregano
salt to taste
cube the zucchini- approx 1 cm cubes, but they don’t have to be uniform in size. Dice the onion and tomatoes.
preheat on medium heat 1/4 cup of olive oil in a large pot.
add the zucchini, onion and tomatoes.
Cook, stirring frequently, until the juices are released from the vegetables then put on low heat and let simmer for ten minutes or until most of the liquid is gone. Add 1 heaping tablespoon of dried oregano and stir in. salt to taste
Serve on tostadas or in soft tortillas. Add cream and/or cheese if desired. Can also be served as a side dish.
Another twist is to add a 2-3 chopped canned serrano peppers and tir them in, right before serving.
