How do Mexicans cook their food so fast?

When I’m in my favorite Mexican restaurant, they have ready made chips/salsa free for appetizer, and not even 10 minutes after my wife and I order, our food is ready! These are dinner plates (ie big chicken quesadilla or a mixture of fajitas and tacos) that we order. You order the same at another local restaurant, you wait 20 minutes sometimes.

How do Mexicans cook so fast?

Because we are MexiCANs not MexiCANTs!

1. the grill is always hot
2. the salamander (broiler) is extremely hot and fast
3. prep! Meat already cut up, cheese, lettuce, tomatoes, etc. shredded, rice & beans warming all the time.
4. they make the same things all day & night repetition!
5. smoke & mirrors.

    All meat ias already cooked, kept warm. They just shove it in a taco shell, roll it up in a tortilla (and fry it, if a chimichanga), or set it in a sandwich press if a quesadilla. Enchiladas are rolled to order (filled w/ cooked meat or chz) and then sauced adn set under a super-hot heat lamp to get melty.

    Beans and rice area also already cooked and are just waiting on you to order them.

    Probably the only thing they cook fresh to order is fajita meat, though it’s already marinated. They just grill it on both sides and slice.
