I love making mexican food but it is SO fattening… what are some recipes I can make that are healthy?

I have already made ground beef tacos but instead subsitituted the ground TURKEY lean meat instead and added taco seasoning… it was wonderful. But what are some OTHER recipes I can make that aren't fattening? And side dishes…?

The great things about Mexican-American Food, is the majority of the ingredients are easy to locate and also come in a lesser fat variety. I would just take a recipe you have and alter a few of the igredients. The Turkey meat is good, but you could also substitute with chicken, pork, or even fish. Try using low fat cheeses and sour cream. Load up on fresh vegetables and salsa. If frying, cook with Smart Balance oil. Mexican food is so easy to make healthy. It just takes a little creativity! If you are looking for some recipe ideas, try tasteofhome.com, allrecipes.com, kraftfoods.com (I recently made a low fat enchilada bake that was amazing and a crowd pleaser!), marthastewart.com. Most of these sites allow you to select different categories (ie. low fat, Main Dish vs. Side Dish, etc.) Enjoy!

This is my favorite,
Mexican Vegetables
1 cup cucumber – chopped, with peel
1 can (8 3/4 ounce) corn – drained
1 can (16 ounces) stewed tomatoes
2 Tablespoons chopped red pepper
2 Tablespoons chopped green pepper
2 Tablespoons red wine vinegar
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon dried cilantro or coriander
1/8 teaspoon black pepper
Instructions:1. Combine ingredients and mix well.
2. Serve cold.
Very easy side dish. Nutritional Information:Per serving:

12 g Total Carbohydrates
0.5 g Total Fat
0 g Saturated Fat
0 mg Cholesterol
2 g Protein
320 mg Sodium
1 g Fiber

Re-think recipes. Instead of frying try other methods. For enchiladas, put the corn tortillas in aluminum foil, sprinkle lightly with water, fold tightly and put in 350 oven for 10 to 15 minutes to steam. This will soften them for either layering or rolling. Instead of using regular cheese, use reduced fat. Same with the sour cream if you like that on enchiladas. For a real treat, put corn tortillas on a foil-covered baking sheet (easy clean up) into a 500 degree oven. Keep checking and flipping until nicely toasted. Turn oven off, keep door closed and top the tortillas with reduced fat cheese, diced green chilies, diced onions, salt and pepper. Return to oven and remove when cheese is melted. MMMM!!! Not all Mexican food is fattening. You can make salpicon, one of my favorites. You boil a brisket with onions and garlic until falling apart. Or, if in Texas (like me), you can smoke the brisket. Let cool. Remove fat and shred. Toss with a nice vinaigrette, let sit for several hours or overnight, drain, and toss with garbanzo beans, cubed low fat Monterrey jack or mozzarella, and fresh cilantro. Serve with softened corn or flour tortillas and sliced avocados. I was raised in El Paso, TX, and you can find the BEST Mexican food in the world, including Mexico, there. It infuses Mexican and New Mexican. None of that disgusting TexMex fare here.
And yes, Gumby, it really does taste good! Try it, you may be surprised. It's less greasy and the flavors come through better.
