tortilla roll ups- mix pkg soft cream cheese with 1/2 pkg Hidden Valley Ranch southwestern style dip mix (the powder kind), one can diced black olives, one can diced green chillies- spread onto flour tortilla shells, roll up and place in fridge for about and hour to harden- then slice into chunks and serve with salsa on the side to dip them in- these are so yummy and are gone fast!

A jar of salsa, velveeta block, 1lb. of cooked burger meat, put it all in a crock pot and MMM MMM good cheese dip!!! Fry your own chips out of corn tortillas.

Queso (velveeta cheese and salsa; you can add refried beans, if you want) w/ tortilla chips
Pin Wheels (mix 1 block of cream cheese, 8 oz of of sour cream, jalapeno peppers, shredded cheese, taco seasoning, and seasoned chicken or beef. Mix together in a mixer, roll into a flour tortilla, and cut for individual pieces). Serve w/ Salsa
Set out chips w/ all the fixings to make nachos: cheese, tomatoes, jalapenos, lettuce, seasoned chicken or beef, onions, salsa, etc.
Taquitos (can buy pre made in the frozen food section)
Quesadillas (can buy pre made or make your own). Warm up two flour tortillas on a griddle. On one tortilla, put whatever you want in it (such as chicken cheese, onions, etc); heat up on the griddle, cut into 4 pieces, serve w/ salsa

Layer these items and heat in oven:
creme cheese-8 oz.
chilli-1 can with or without beans
grated cheddar cheese
Serve with scoop fritos or tortilla chips

I make a healthy Mexican "pizza" using whole-wheat pita bread, re-fried beans or black beans, guacamole, sour cream, cheese, and green onions. What you do is you put the pita bread in the oven until it gets toasty, and then you spread the beans (already warm) over each pita as if it were the "sauce" on the pizza. After this sprinkle a layer of cheese over the beans (cheddar is fine, or whatever you have). Put back in the oven until the cheese melts (just for a minute). After this sprinkle green onions on top and then cut the pizza into triangles with a pizza cutter. Put the guac and sour cream on the side for guests to use as they like. It’s delicious! You could also add black olives, tomatos, etc, whatever you want!
