I need a recipe for an appetizer using Mexican rice?

So next weekend I’m having a get together with some friends and I’m bringing an appetizer. I have these boxes of spanish rice mix and so I’d like to use one and make like a Mexican layered dip with it but would that taste ok? You know, the dip with refried beans, cheese, guacamole, salsa, etc. Or do you know of any other recipes I could do that use this type of rice?

    I mean the dip would need to be hot and cold. The salsa, sour cream and guacamole needs to be cold on top but the other stuff needs to be hot.. Kinda complicated.
    The rol ups would be hot and dipped in the cold stuff.
    Roll them up like a burrito, with whatever stuff you want in there make sure you add some chopped cilantro and green onion tops to. Roll them and grill them. Let them set for about 5 minutes then slice them or cut them in 2. Arrange on a platter and have dips like salsa, sour cream and guacamole available.
    They should look something like this: use toothpicks to secure them.

    Mexican Rice Skillet

    1/2 pound EACH: lean ground beef, ground turkey
    1 small onion, chopped
    1 10-ounce can mild diced tomatoes and green chilies
    2 boxes freshly prepared spanish rice
    2 cups shredded lettuce
    1 tomato, chopped
    1 small avocado (about 5 ounces), sliced
    1 21/4-ounce can black olives, rinsed and drained sliced
    1 cup Mexican cheese blend
    Baked tortilla chips and salsa

    In a large nonstick skillet, cook beef and turkey 6 minutes or until meats are no longer pink; drain well.

    Add onion, tomatoes and green chilies.
    Stir in rice and heat through.
    Sprinkle with lettuce, tomato, avocado and olives.

    Stand tortilla chips around edge of skillet; serve with additional chips and salsa.
