Does anyone have any good authentic mexican recipes for breakfast?

Posted by: admin  /  Category: Mexican Authentic

My bf’s birthday is next Friday and I am thinking of making breakfast for him to start out the day. He is Mexican so I want to make something for him to remind him of his childhood. He is from Puebla if that makes a difference.
Please provide a mexican family recipe if you have one?

Thanks so much!

    Chilaquiles:
It’s a combination of dried tortillas or tostadas (hahaha hope you understand a few spanish words), green or red tomato sauce (not ketchup!!!!), cheese, frijoles(beans), chicken and cream. All this put toghether in a dish and heated in the oven. That’s how I eat it but it’s better described below.

    ITS REALLY EASY

    To cook the chicken
    4 bonless, skinless chicken breasts
    1 onion, quartered
    2 cloves of garlic

"""""The tomato sauce i think you can get it at the super market I have never done it home made"""""
    For the tomato sauce:
    2 onions chopped very small
    1 garlic chopped very small
12 tomatoes peeled and seeded and pureed
    1 tablespoon cilantro, minced
    salt and pepper, to taste
2 tablespoons tabasco sauce if you want it hot (optional)

    Tortillas:
    4 round corn tortillas

    To assemble:
sour cream diluted with a small amount of water
    1/2 pound manchego cheese
    1/2 pound mozzarella cheese

The heating up must be around 10 – 15 min
