Do you have a recipe for a mexican casserole? ?

I want to make one instead of the usual tacos that are planned.

Well I like to make Chili Pie

This works with any kind of baking dish , if you have a wider baking dish then just use two tortilla’s side by side for each layer instead of one.
Preheat oven to 400 F
Lay down flour Tortilla(s) in a sprayed baking dish or pie tin.
Spread chili on top of the tortilla(s) about a half inch thick.
Add a layer of shredded cheese just enough to cover the chili.
Add another layer of tortilla(s)and keep repeating layers until you reach top , covering the last layer with tortilla(s)
OPTIONAL: Add onions and cilantro to each chili-cheese layer and if you like spice throw some sliced jalapeno’s on there as well.
Put it in the oven and bake for 12- 18 minutes … until the dish is hot , cheese is melted and the tortilla(s) on top are kind of crispy

This dish is super fast to make and is pure cheesy goodness

    Mexican rice and beans casserole -
    Ingredients
    1 tsp vegetable oil
    125ml/4fl oz water
    1 onion chopped
    2 cloves garlic, crushed
    110g/4oz mushrooms, sliced
    2 green peppers, chopped
    125g/5oz long-grain rice
    1 can (796g/28oz) red kidney beans drained
    1 can (540g/19oz) tomatoes
    1 tbsp chilli powder
    2 tsp cumin
    a pinch cayenne pepper
    110g/4oz grated low-fat mozzarella cheese

    Method
    1. In large saucepan, heat oil with water over medium heat. Add onion, garlic, mushrooms and green peppers; simmer, stirring often, until onion is tender, about 10 minutes.
    2. Add rice, beans, tomatoes, chilli powder, cumin and cayenne; cover and simmer for about 25 minutes or until rice is tender and most of the liquid is absorbed.
    3. Transfer to baking dish and sprinkle with cheese. Bake in 18OC/350F/Gas 4 oven for 15 minutes or microwave at high (100%) power for 1 to 2 minutes or until cheese melts.

    I make something I call taco pie. Here we go!

    1 can red beans, drained
    12oz ground beed
    1/4 cup minced onion
    2 garlic cloves, crushed
    1, 4oz can tomato sauce or 1 8oz can diced tomatoes (omit water)
    1/2tsp garlic salt
    1 tsp pepper
    1/2tsp chili powder (not the hot stuff)
    -1/4tsp curry powder
    1/4tsp paprika
    1 tsp onion powder
    1/4tsp cumin
    1/4cup water
    1 can corn, drained or 8oz frozen corn
    1 box corn muffin mix, prepared, add 1 tbsp sugar and 1 to 2 tbsp milk to thin to the batter

    heat oven to box directions, usually about 325 to 350F

    Brown beef and drain almost all oil from pan.
    add onion and garlic, cook approx 3 minutes on medium heat
    add drained beans, corn, tomato sauce and all spices
    stir to incorporate
    if tomato sauce was added aslo add water, if diced canned tomatoes were added, omit water
    turn to low flame and simmer mixture for a few minutes, check for salt here add more if needed
    The desired consistancy is thick chili-like, cook longer to thicken or add water to thin to reach this consistancy.
    Pour/spoon contents into 8×8 glass pan. Carefully pour corn muffin mix on top, making sure to get as even a layer as is possible.
    THIS IS IMPORTANT!!! Gently seal the corn mix to the edges all around the pan, make sure there are no holes. Filling will erupt out of any hole and make a mess in the oven! Trust me on this. :)
    Bae 20-25 minutes until surface is golden brown. Wait 5 minutes after removing it from oven then cut into squares, spoon out with large plasic or metal spoon and flip upside down on plate, so the filling is up. Spoon any excess from pan on top.
    Can be sprinkled with cheese or fresh tomato or salsa, sour cream is good too.
    Sounds like a lot of work, but it goes pretty quick.

    stove top casserole
    one pound ground beef cooked and browned then drained
    paparika
    garlic powder
    cayenne optional
    onion powder optional
    in another pot have about 1 cup white rice cooking
    jar of salsa hot or mild
    a can of black beans or red drained
    when meat is done and drained add the cooked rice to the pan mix well add the salsa and beans to the mixture mix well then add the seasoning add as much to ur taste
    mix well
    when all well bleneded leave sit on stove and get a bowl take a tortilla buy the long ones that are very big like wraps or for burritos.. and set that in the bowl so it covers it fill it with the meat mixture on top add cheddar cheese and sour cream

    Mexican Lasagna – Yummy!! (and really easy too!)

    You will need some shredded chicken that has been cooked with green pepper slices, onion slices & garlic.

    In the bottom of a baking dish, put a double layer of flour tortillas. Top this with some of the chicken mixture, then some enchilada sauce, then some shredded mexican blend shredded cheese. Repeat this layering until the baking dish is full. Top it off with a layer of tortillas and some cheese. Then, bake it at 350 degrees until the middle is hot and bubbly. Mmmmmm.
