I’m making a layered mexican casserole, I need an answer ASAP?

Posted by: admin  /  Category: Mexican Casserole Recipes

I’m using a recipe from the Betty Crocker Casserole recipe book. The recipe calls for Spanish rice to be added in the casserole. This is what it says: "Spoon and spread Spanish rice over tortillas" but no where in the recipe does it say to cook the rice. I know in some casseroles you put dry rice in and it’ll cook itself in the oven, but I’m not sure if that’s the case here. Will the rice cook on it’s own or should I cook it FIRST then put it in? The other ingredients are ground beef mixed with salsa. So would that help cook the rice? I’m lost here…can someone help…QUICK?!?! I’m in the middle of cooking it now.

Please, serious answers only, don’t be an idiot and write something stupid just so you can get "points" that don’t mean anything!

Thanks!!

It sounds like your recipe is sort of assembly instructions. You want to cook your rice and your meat prior to layering over the tortillas. Otherwise the length of time required to cook the rice and meat will cause your tortillas to turn into mush.

I’m assuming that the Spanish Rice they’re referring to is from another recipe in the book??
If that’s the case, I think they’re meaning for you to spoon over the COOKED rice.

Besides that, if you aren’t adding any other liquid, the salsa isn’t moist enough to cook the rice while baking. Plus, what it does absorb will only leave the rest of the dish dried out.

Cook the rice first, in my opinion.

Cook the rice first. You can use chicken broth for the water and add some chopped tomato or a can of Rotel with chilies.

hope this isn’t a stupid answer but unless it calls for a lot of liquid you should cook it first

I think I have seen canned Spanish Rice on the store shelves, but if not, you can cook rice and add other ingredients (look on line for recipes). I even use left over rice mixed with salsa to taste like Spanish Rice. It’s good!
