Can anyone recommend any good mexican recpies using chicken?

- Tinga the Pollo (Shredded chicken with Chipotle Sauce)
1 lbs onions
1 lbs chicken
5 roma tomatoes
Chiles chipotles from the can.
- Slice 1lbs of onions and put then in the pan with tiny little bit of olive oil until they go clear; in the blender put around 5 roma tomatoes and some Chiplote chiles, add beef bullion or chicken, salt and pepper, taste it and season it 'til you think is not to spicy), after you get the mix added to the onions in the pan and add the previously cooked and shredded chicken (1lbs), this is delicioso with a side of white or red rice, lots of tortillas and enjoy!

You can boil the chicken (add 1 whole onion-peeled, not sliced), and buy a small jar of Mole paste ("just add chicken stock.")
When the chicken's fully cooked, remove chicken from chicken stock and add the mole paste to the chicken stock. You've gotta keep stirring it, though, until the paste dissolves in the chicken stock (takes a good, strong arm to do this!) When the chicken stock and the mole paste are completely mixed, it will look like a gravy. Add the cooked chicken to this gravy (mole), and serve over white, or mexican rice. YUM!!!!! This is a GREAT recipe!! I buy the mole paste from the brand name Doña María.
