Does anyone know what kind of cheese they put in the chicken quesadilla at Panchero’s Mexican grill?

anyonee?? and what kind of chicken? i want to try and make my own chicken quesadillas at home.
Tex Mex restaurants use customarily a mix of Cheddar, Mozzarella, and Monterrey Jack. Authentic Mexican use Oaxaca cheese or a mix of Oaxaca and Mozzarella.

    It is probably a blend of cheddar and monterey jack cheese.

    I have no idea since there is no Panchero’s in Long Island, anyway, it could be mozzarella or monterrey jack, depends on how you want them as long is a cheese that can melt is good for your quesadillas.

    I haven’t had them but I would say Queso Fresco a Mexican cheese and you can get that at almost any store in the dairy section by the other cheeses. Too make the easiest chicken quesadillas I would use the can of chicken in the section by the tuna. It is good and it works well for that. That is how our local Mex. restaurant makes their chicken tacos.
