10 yr old son needs to serve an authentic Mexican dish/dessert to his class 2morrow.?

Please help with recipes. Needs to be kid friendly (have to serve 20-30 small portions/samples) – something that kids will like. Very easy to make. He has no way to keep this hot. This is for a presentation – his research was on Mexico. Thank you for your help.

If you are close to a mexican food store, you can buy Churro mix and fry them up. Kids love them, just like the ones at Disneyland. If not you can make Elephant ears bunuelos http://www.cooks.com/rec/view/0,184,155180-250194,00.html

    chop red onion , cilantro , jalapeno and tomato .
    dress with lime juice , serve with tortilla chips .

    The easiest and fastest thing to take…store-bought tortilla chips, jarred salsa and a homemade guacamole. All you need is a couple of avocados, some chopped onion, tomato, cilantro and a teaspoon of lemon juice. Good luck!

    Quesadillias! Buy uncooked flour tortillas, cook it on the stove, add cheese, and you’ve got a yummy, kid-friendly snack.

    How bout a breakfast burrito with chorizo and scrambled eggs. Fry the chorizo in a pan until cooked through and dissolved into little pieces. Add scrambled eggs to the pan and cook until everything is incorporated. Spread re fried beans on a large flour tortilla add chorizo and scrambled eggs on top and roll up into a burrito. Serve with a jarred salsa and Chips on the side. Pretty quick and easy. Hope this helps.

    Yes id go by the Churros if you can get the dough and fry them tonight, or maybe you can make Arroz con leche, just boiling milk + rice + condensed milk + coconut milk + cinammon.
    The guacamole is a good choice just dont make it too spicy and mince the onions really fine so they wont notice them.
    Also Esquites are really nice, (boilng water + corn + epazote herbs or oregano served in small cups with lemon juice salt and chili powder and or mayo and or cream and or queso fresco.
    However this last one is better served hot.

    Try making gaucamole. You will need a mixing bowl and fork. As for ingredients you will need about 3-5 avacados and 3-5 tomatoes. Cut up the avacados and tomatoes and mix them with the fork. Also you will need about 2-3 limes and cut them and sqeeze them into the quacamole, make sure to get all of the juices out. Add lawry’s seasoned salt and black pepper. Make sure when you add the salt and pepper it is not too much, you might have to taste it to make sure it is just the right amount. Buy tostitos chips, I like the hint of lime ones, but since you are talking about kids maybe it should be regular, but whatever you think is best. Enjoy!

    Go to a 7 eleven and buy some Tamarind candy, it’s in the Mexican candy isle. Or… you can make sopapillos…just fry up some flour tortillas and sprinkle with sugar and cinnamon..and top with liquid chocolate.

    Classic Guacamole
    serves : 30
    Ingredients

    * 15 ripe, Fresh California Avocados, seeded and peeled
    * 7 ½ Tbsp lemon juice
    * 3 ¾ clove garlic, crushed
    * 3 ¾ tomato, finely chopped
    * 15/16 Cup finely chopped onion
    * 15/32 tsp ground cumin
    * 11 ¼ drops hot pepper sauce
    * Tortilla chips

    Instructions

    1. Using a fork, coarsely mash avocado with lemon juice and garlic.
    2. Stir in remaining ingredients to blend.
    3. Garnish as desired and serve with tortilla chips.
    Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole.

    *Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
