Does anyone know any good Mexican recipes?

Esp. a dessert of some kind possibly?

Apple Enchiladas

INGREDIENTS:

1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/3 cup margarine
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup water

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8×8 baking pan.

3. Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.

4. Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes.

5. Makes 6 large tortillas; may be cut in half to serve 12.

    Fried ice cream! It is cinnamon ice cream, with a fried piece of tostada covered in butter and cinnamon and caramel on top.

    For dinner a chipotle chicken bowl:
    taco shell bowl and layer the following:
    thin layer of refried beans
    spanish rice
    shredded cheese
    grilled chicken marinated in lime juice, garlic, pepper
    more cheese
    sour cream
    guacamole
    pice de gallo
    lime slice on top

    SOOOO good.

    this is one of my most favorite desserts ..
    you'll need
    1. churros (they sell the kits at most grocery stores)
    2. vanilla ice cream
    3.rum (rompope)
    so you fry the churro put it in the cinnomon sugar mix, cut it in half or 4s.then you put a scoop of ice cream in a bowl, stick the churros in on the sides and drizzle with the rum. The hot and cold combination with the the rum is amazing!!! hope you try it

    try these carne asada tacos, its so easy to do and they are really tasty!!!
    INGREDIENTS

    * 1 1/2 pounds boneless beef top sirloin, cut into thin bite-size slices
    * 1/2 teaspoon salt
    * 1 teaspoon freshly ground black pepper
    * crushed red pepper to taste
    * 1 lime
    * 1 (28 ounce) can tomatillos you can find in the mexican isle of the store, the are sweet green things that look like tomatoes
    * 2 fresh jalapeno peppers, seeded ya dont want the seeds in there cuz thats where the heat lives so make sure to get em out!!
    * 4 tablespoons canola oil
    * 1 (10.5 ounce) can beef broth
    *
    * 12 (6 inch) corn tortillas
    * 1/2 large onion, chopped
    * 2 tomatoes, chopped
    * 1 avocado – peeled, pitted and sliced
    * 1 bunch fresh cilantro choped

    DIRECTIONS

    1. Place sliced meat into a shallow bowl, and season with salt, black pepper, and crushed red pepper. Squeeze the lime juice over the meat, and turn until evenly coated. Cover, and refrigerate for 30 minutes.
    2. In a blender or food processor, combine tomatillo and jalapeno. Puree for 15 to 20 seconds, or until thick. Heat 1 tablespoon oil in a large skillet over medium high heat. Carefully pour in tomatillo mixture. Cook, stirring frequently, for 5 minutes. Stir in beef broth. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon. Transfer mixture to a serving dish.
    3. Heat tablespoon oil in a large skillet over high heat. Stir in 1/3 of the beef, and saute for 1 minute. Transfer to serving dish. Repeat with remaining beef. Meanwhile, heat tortillas in the oven or microwave, according to package instructions.
    4. To serve, place two tortillas on top of each other. Add desired amount of meat, spoon over some tomatillo mixture. Top with onions, tomatoes, avocado and cilantro. Garnish with a wedge of lemon, to be squeezed over taco before eating.
