We are having a mexican themed dinner and I want something to make for dessert…?

I really wish I could make sopapillas but I don’t have a deep fryer :( Any other dessert ideas with a recipe please?

Tres Leches Cake is always a hit when I serve it. This is the recipe I use:

Ingredients

* 3/4 cup butter, softened
* 1 1/2 cups white sugar
* 9 egg yolks
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* 1 cup milk
* 9 egg whites
* 1 teaspoon cream of tartar

* 2 cups heavy whipping cream
* 1 (5 ounce) can evaporated milk
* 1 (14 ounce) can sweetened condensed milk

* 2 cups heavy whipping cream
* 1 cup white sugar

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg yolks one at a time, beating well with each addition, then stir in the vanilla. Sift together the flour and baking powder. Add the flour mixture alternately with the milk; beat well after each addition. In a large glass or metal mixing bowl, beat egg whites and cream of tartar until whites form stiff peaks. Gently fold the egg whites into the cake batter using a rubber spatula. Spread the mixture evenly into the prepared pan.
3. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool.
4. In a small bowl, stir together the 2 cups heavy cream, evaporated milk and sweetened condensed milk. Pour the mixture over the cake until it wont absorb any more. You may have 1/3 to 1/4 left over. That’s okay.
5. Combine the whipped cream and sugar, spread over soaked cake. Refrigerate cake until serving, Pour leftover milk mixture onto plates and swirl in jam if desired, before setting cake on the plates.

    Sunshine, you DON’T need a deep fryer to make sopapillas……..you can use a heavy deep saucepan. Just be careful and DON’T crowd the pan, just make 3-4 at one time. Any more, and the temperature of the oil will drop and you’ll have soggy soapillas……

    Another good light dessert for a Mexican themed dinner is Flan………and it’s a cinch to make…..if you’d like a recipe, I’ll start this and come back to it………

    EDIT:

    Pumpkin Flan:

    Cooking spray
    2/3 cup sugar, divided
    1/2 cup whole milk
    1/4 cup evaporated milk
    2 eggs
    2 egg yolks
    1 teaspoon vanilla extract
    1/2 teaspoon grated nutmeg
    1 teaspoon ground cinnamon
    3/4 cup solid-pack pumpkin

    Directions

    Arrange 8 (4-ounce) ramekins inside a 9 by 13-inch baking pan. Spray ramekins lightly with cooking spray.

    In a small saucepan, heat 1/3 cup sugar over medium heat, stirring constantly, until sugar melts and forms a medium-brown caramel, about 7 minutes. Working quickly, transfer 2 teaspoons of the caramel to each of the ramekins, swirling as soon as you spoon in the caramel (it will harden quickly). Set aside.

    Preheat oven to 350 degrees F.

    Combine milk and evaporated milk in a small saucepan over medium heat until warm. Reduce heat to a low simmer and keep milk warm. Meanwhile, bring about 4 cups water to a boil and keep hot. Whisk together eggs, egg yolks, remaining 1/3 cup of sugar, vanilla, nutmeg and cinnamon. Fold pumpkin into egg mixture. Then fold into evaporated milk. Divide filling among ramekins, then place baking sheet in oven. Pour hot water into baking pan until it reaches halfway up the sides of the ramekins. Bake for 35 to 40 minutes, or until flan is just set. Let cool. Place a dessert plate on top of each ramekin and invert; flan should slide out, and syrup should flow onto sides of the dish.

    I’d suggest fried ice cream but you get back to the whole deep fryer issue.

    * 1 pint coffee or vanilla ice cream, softened in microwave on defrost 30 seconds
    * 2 cups flaky corn cereal (recommended: Corn Flakes)
    * 2 teaspoons ground cinnamon
    * Honey, for drizzling

    Directions

    Scoop out ice cream into small bowls. Crush corn cereal in your hands (or in a re-sealable plastic bag) and top the ice cream. Sprinkle with cinnamon and drizzle with honey.

    Flan is perfect.
    But here’s a super easy dessert we make here in the Southwest.

    Apple Burritos:

    4 granny smith apples: peeled, cored, sliced (or other firm apple)
    8 flour tortillias
    1 teaspoons cinnamon
    1/4 cup sugar
    3 Tablespoons butter
    Oil for frying
    Cinnamon & sugar mixture (1 teaspoon cinnamon and 1/3 cup sugar)

    Put apples in a skillet. Add the butter 1 teaspoon of cinnamon and 1/4 cup of sugar. Cook until apples are tender.

    Put a couple spoonfuls of apple slices on the edge of a flour tortilla. Fold tortilla into a burro. Brown lightly in hot oil turning at least once. Put on paper towel to drain. Sprinkle with cinnamon sugar mix while hot. You can serve these warm or at room temperature. Depending on how large your tortillas are, you might want to cut them in half and serve with a scoop of vanilla ice cream.

    I make these quite often. We love them. A cup of hot cocoa and a hot apple burro is a real treat on a cold night. And, it’s easier than making an apple pie.

    Use a deep pan on the stove. The tortillas will lay flat in the grease and just do one at a time. Sprinkle with cinnamon sugar and dip in honey. Or you could do a dish that goes like this…..A can of drained crushed pineapple and than spread a can of cherry pie filling on that, than sprinkle a whole box of yellow cake mix, than drizzle a melted stick of butter over that, than top with chopped pecans and bake at 375 degrees for 35 mins. It is called dump cake and soooo easy.
