It depends on HOW easy you want...

I have a super simple one for Bean and Rice Casserole:

1 can Spanish rice
1 can of Ranch Style Beans
10 corn tortillas torn into pieces
1 lb ground beef browned and seasoned with taco seasoning
1/2 cup cheddar cheese

put all ingredients into a rectangular baking dish and cook at 350 degrees until warm ad bubbly (about 30 minutes)

Another easy one is this one for Chicken Green Chili Enchiladas

1 can cream of chicken soup
1 can cream of mushroom soup
1 can of white chicken breast
1 can green chilies
5 flour tortillas torn into pieces
1/4 cup Velveeta cheese cubed

put all ingredients into a saucepan and cook until bubbly and cheese is melted, pour into baking dish and cook at 350 deg. for 30 minutes, serve with chips and salsa
