HI! 12 y.o. daughter needs quick mexican food recipe for school.?

Not sure if teacher wants it prepared before, or if they have to prepare at school yet.
Someone already got nachos chosen !

get the individual bags of Doritos the brown some ground beef with taco seasoning get some shredded cheese and lettuce and chopped tomatoes and let the kids go at it its always a fav at potlucks at work also

    Quesadillas

    8-inch flour or corn tortillas, re-fried beans, shredded cheese, salsa.

    Spread small amounts of all or any of the fillings over half the tortilla, leaving a 1-inch border. Fold over and heat in a skillet, microwave or 350 degree oven until heated through. Cool 5 minutes, cut and serve.

    try vegan arroz con pollo (vegan chicken and rice)…I made it for spanish class and eveyone loved it and my teacher asked if I'd make more next time we have cultural day :)

    Ingredients:

    1/3 cup tomato sauce
    1 2/3 cups water
    1 cup white* rice
    Lightlife chick'n strips, or other soy chicken
    green bell pepper
    sliced yellow onion
    oil
    About 1 tsp of each cumin, garlic, onion, and some salt/pepper

    First, start by sautéing the rice, bell pepper, and onions in oil. Immediately add all the spices. Add the soy chicken, and sauté until the rice becomes a more bold white. It’s pretty obvious once it does.

    Then dump in the tomato sauce, and water, bring it to a boil and reduce to a simmer. Cook for about 30-40 minutes covered.

    you could also try bean Papusas (not sure how you spell that) they are really easy to make.

    Doritos bake

    1 bag Doritos
    1can cream mush
    1can cream chicken
    1can rotel
    2 chicken breast cooked shredded
    1 package sharp cheddar

    line baking pan w/Doritos
    mix chicken, cream mush, cream chicken & rotel in microwave bowl heat until warm
    cover doritos w/mixture
    layer on cheese
    bake 20min @ 350 or until all cheese is melted

    Layer 1 : seasoned ground beef (taco season)

    4: shredded chedder cheese
    5:diced tomatoes

    Tomatoes, jalapenos cilantro, onion, lime, salt.
    Chop tomatoes, onion, cilantro and jalapenos. Add salt and lime and listo. Buy any kind of tortilla chips

    You can make some jicama peeled and cut in thick strips with lemon, salt and chilli powder. It is tipical to find chopped fruit with lemon and chilli powder in many corners in mexican streets. You can send the lemons already cut in halves and prepare it at the moment.
