I love Mexican food, do you have any favorite recipe you’d like to share?

Tacos and burritos are great, but I am really looking for something new, Thanks !!!
Spinchilada’s
1 bunch of fresh spinach (or bag)
12 small corn tort.s
enchilada sauce (I use the package mix)
8 oz sharp cheddar
8 oz monterey Jack
8 oz cream cheese
1 medium onion
jalapenos
Shread the freash spinach. Chop onion, shred the cheese and jap.s, mix w/ hands.
Heat frying pan w/ 1/2" oil in bottom, dip corn torts 1 by 1 in medium/low heated oil. (this will soften them-easier to roll w/o cracking)
spread sauce on both sides of tort, fill and roll. Place in 9×12 cake pan. Bake @ 375′ for about 45 min.
Tell the kids it’s parsley, they’ll love it the first time, and not care if it’s spinach after that!
