Large Flour Tortillas
1 Can Enchilida Sauce (Mild or Hot)
Bag of Shredded Mexican Cheese
Onion Powder or Minced Onion
Combine Cream cheese and sour cream along with 1 cup cheese in large bowl. Mix until smooth.
Cook meat (with onions), drain and add to mixture
Mix Together well.
Roll mixture into tortillas. Top with enchilida sauce and lots of cheese.
Bake at 450 Degrees for 15 minutes or until bubbly.

Buy a pack of already cooked Tyson frozen chicken faijta strips. Heat them up on the stove. Buy a pack of powder enchillada sauce and cook it up on the stove. U can use peppers or whatever you like them. Fill the faijta’s up with the chicken and fillings you choose. Roll them and place them in a deep dish greased pan. Cover with the red sauce you cooked on the stove. Then smother with a pack of Cheddar Cheese. Bake 400 for about 15-20 minutes. mmmmm tasty References :

2 tbs Olive Oil
1 package boneless and skinless chicken thighs cut into chunks
1 28oz can tomatoes (any kind) I like diced or crushed ones
1 can chic peas (aka garbanzo beans)
1 can of corn
1 carton + of chicken broth add or subtract as you like
3 cloves of garlic minced or to taste
1 large yellow or spanish onion diced
Salt and pepper to taste
ground cumin to taste more is better
chili powder to taste more is better
garlic powder to taste
onion powder to taste
1 pinch of cayenne pepper or to taste
Tortilla chips for serving
Sliced green onions for garnish
Shredded cheese (more is better)
Cooked rice or noodles (rotini noodles are better)
Saute onion in olive oil for 2 to 3 minutes or till it’s translucent.
Add garlic cook for 1 or 2 minute being carefull not to burn it.
add Broth chicken pieces, chick peas, tomatoes, corn Juices and all. to the pot with all of your spices and stir to combine.
Bring to a boil then back the heat down to a low simmer for 15 to 20 minutes.
Cook your noodles set aside.
Add noodles to bottom of your serving bowls top with soup add cheese and or sour cream and green onions and enjoy. The tortilla add some saltiness so be carefull how much salt you add durring cooking.
This gets better the next day. It feeds us for 3 days usually. References :
