Vegetarian/vegan recipies for non-vegetarians?

My boyfriend and I aren’t vegetarian, but I’m trying to incorporate more vegetarian meal options into our daily life. I feel we’d be healthier if we ate a more organic and vegetarian-ish diet. He is not a fan of tofu by any means, so that’s out. But I don’t think he has any objections to other alternatives.
Does anyone out there have any favorite recipes they’d like to share? We love Chinese, Italian and Mexican foods, if that matters. Thanks!!
I like the first responder’s suggestion, though I’m not sure how he’d react to the eggplant. I may try that one day just to see how he feels about it.

Substitute Eggplant for chicken….Sure it’s not as great, though it’s okay to eat.

veggie fried rice (since you mentioned chinese)
sesame oil
2 eggs
3-4 cloves of garlic minced
1-2" piece of ginger root, peeled and grated
(sorry I’m not much of a measurer)
1 box frozen mixed veggies
1 small bunch scallions, chopped
soy sauce
mirin wine (white wine works fine too)
2 cups cooked rice
salt to taste
coat a wok or large saute pan w/ cooking spray and scramble eggs over med-high heat. remove eggs and set aside.
in same pan heat 1-2 tsp sesame oil. add garlic and ginger and saute about 1 min. add rice and veggies. saute till veggies are heated. add eggs, scallions, about 2 tbsp soy sauce and 1 tbsp wine to start. adjust amounts to taste. season with salt to taste and saute till heated through.

Why not try the bbcgoodfood.com website. I am making my valentines meal from there having only discovered it today. I am also a meat eater but my partner is veggie. I regularly make indian food for us as it lends itself to vegetarian diets easily. If using a meat subsitute then I use quorn pieces or quorn mince regularly. I would suggest you follow simple traditional recipes and just substitute out the meat with either meat replacement produce such as quorn, releat or use ‘meatier’ veggies instead such as mushrooms, squashes, aubergine etc. It is also probably worth mentioning that as a yo yo dieter all through my early adulthood when I met my partner I switched to a mainly vegetarian diet and lost 4 stone – something I never came close to achieving on any other diet!
