See below, and substitute chicken or veggie stock for the beef broth if you like.

A mexican friend from work taught me how to make it. I don’t have exact measurments, but this is what you do…
I take 1 cup white long grained rice and saute in (uncooked) in a little vegetable oil. Just enough to coat the rice. Saute until lightly browned, then add 1 3/4 cups water to the hot rice. Add a few tablespoons tomato sauce, ground cumin, a little chili powder, a little mexican oregano, and a little seasoning salt. Taste the liquid and adjust seasonings. Remember that the water will taste stronger than the finished rice. Bring to a boil, put a lid on it, reduce heat to low until all water is absorbed. If you want more flavor (less like restaurants) you can use chicken broth instead of water.

We like Mahatma brand Spanish rice. We use a small can of tomato sauce instead of the ketchup it says to use. We add Rotel tomatoes and sometimes pigeon peas to it, too.
Add anything you want…diced red bell, green bell, onion, poblano, jalepeno, chopped carrot, corn, celery

I tried every recipe I could find for Mexican rice and hated them all until this one: Lighty toast/saute1 c uncooked white rice in 2 TBS of olive oil, then add 1/4 c of minced onion and a tsp of crushed fresh garlic and brown for a couple of minutes (don’t burn the onions/garlic). Add 2 c of hot water and 2 cubes of Mexican chicken bullion (find it in the Mexican food isle). Add a 1/2 to 1 medium can of crushed tomatoes and a little bit of the juice. Cover and simmer on low heat for about 20 mins. You can add a 1/4 to 1/2 c of frozen peas and carrots too which you’ll find in many Mexican restaurants.
