What makes Mexican rice the orange-red color it is at restaurants?
Posted by: admin / Category: Mexican Rice
What is the herb or seasoning that makes it that way?
Definitly NOT saffron….saffron is used in mediterranean cooking and would turn the rice bright yellow. Definitely NOT turmeric….. this would also cause it to be yellow, as turmeric is the primary ingedient in yellow mustard. If the rice is an orange red color, more likely its a tomato base the rice was cooked in, often chile peppers of various heat intensity are added.

It should be saffron, but it is probably mostly turmeric.

Usually just your plain old pecante sauce. Sometimes chili pepper as well. Some make it with a tomato base, which turns orange when heated/fried.

Not sure, but there is usually tomato in Mexican rice recipes. The yellow orange color could be tomato paste or it might even be a little saffron.

The orange-red color is a Hispanic seasoning made by Goya. It comes in orange-red pouches and it is called "chicken boullion" by Goya. Not only does it give the rice color, but also a lot of flavor. Enjoy!

The red tint comes from the tomato juice etc found in the salsa you add to the rice. You can probably find a good recipe at the Food Network's web site.

I AM A LATIN MOTHER WHO IS AN AVID COOK AND KNOWS FOR A FACT THERE IS NO SAFFRON IN SPANISH RICE. IT'S A LITTLE BIT OF TOMATO SAUCE OR THE JUICE FROM TOMATOES, SOMETIMES IT'S CHILI POWDER!!!

It is not saffron, nor tomatoes, is a small seed called achiote. This seed is cooked and releases a natural oil that is used for cooking and is used in most latin cuisine

It's the tomato or tomato sauce they use. There are other herbs invovled in the flavor but the color comes from the tomatoes. My Grandma makes the best spanish rice!! Now you've got me hungry; I have to call her to tell her to make some for me.

Common sense.. Tomato sauces and saffron makes it orannge/ red color .. U taste the tomatoes sauce in the rice??
Maybe you should do an experiment in cooking one yourself. then u can understand why the Mexican rice turns to orange/ red color itself.. SMILES

It's definitely tomato sauce. I have never heard of adding saffron to mexican rice, that would be more of the spanish rice. I make it all the time and so have my family without the need of any herb for coloring.
