Need food ideas 4 party?

I am having buncco and i need ideas 4 food. i am doing a mexican theme and am trying to find some different recipes besides the usual. i am looking 4 some good taco dip recipes or salad recipes.along with any other snack or dessert ideas. please give as many link as u can and if u have made the food please tell me how it was. thanks a ton

Buffalo Chicken Dip: (serves 20)
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as Franks® Red Hot®
1 1/2 cups shredded Cheddar cheese

Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly.

You can serve with either crackers, or nachos! Yummy!

    I did this a long time ago because my mom was on a low carb diet, and it went over so well, I kept on making it in different versions.

    I make a fresh salsa the day before, but you can buy pretty good salsa now.
    The day of I season some type of meat, fish or seafood with taco seasoning mix very well with a little olive oil and broil it.
    The key is to mix 2 Haas avacados with 1/2 container sour cream, salt, pepper, about 1 tbsp fresh cilantro, and the juice of fresh lime in a food processor.

    Serve it in a bibb lettuce cup, I recommend people do the meat/fish/seafood, salsa then avacado cream. It's light and delish.

    Another oldie, but goodie is empanadas. You can make them as large or small as you like.

    I know this sounds weird, but it's really good. Take a tortilla and bake it until it's crispy on one side. Then flip and put on a few pineapple chunks with a little brown sugar. Bake again on 400 until the sugar is really brown. Let them cool then pie slices. On the side have marscapone cheese. It's really good.

    JICAMA SALAD
    2 c. peeled and diced jicama
    1 green bell pepper, seeded & diced
    1/2 medium onion, chopped
    1 c. diced cucumber
    1/4 tsp. olive oil
    2 Tb. red or white wine vinegar
    1/2 tsp. oregano
    2 tsp. chopped fresh cilantro
    salt & pepper to taste
    Combine all vegetables. Mix remaining ingredients as a dressing and toss with veggies. Serve immediately or refrigerate. Serves 4-6 (I made this recipe up and it was published in Tasting Spoons over 25 yrs ago.)

    CON QUESO DIP
    1-2 (8 oz) pkg. softened cream cheese (how creamy do you want it?)
    2 cans Rotel tomatoes (I like w/diced peppers)
    8-12 oz. shredded cheese (I like mixed Mexican)
    Blend all ingredients together in small crockpot, until smooth & very hot. Serve hot with crackers….(a family favorite…. VERY YUMMY!)

    Obviously, guacamole & salsa and chips….. But you can put some salsa into sour cream for a dip for veggies too….

    Don't forget some buckets of fruit margarita mixes (mango is good)… We always have margarita mix, ice, tequila and a blender on the counter at OUR bunco parties:)

    This is a great dip a friend of mine makes for our card parties….everyone asks her for the recipe!

    1 pkg. any frozen Chicken Breast Fajita kit, thawed, ingredients separated

    4 Tbsp. vegetable oil, divided

    2 cups, frozen corn

    1 jalapeño pepper, chopped (optional)

    1 cup mayonnaise

    1 1 cup shredded Cheddar cheese

    1/2 cup salad croutons

    Steps

    Preheat oven to 400ºF. Remove tortillas from meal kit and cut each into 6 triangles. Toss cut tortilla triangles with 1 Tbsp. vegetable oil and bake on a foil lined baking sheet until golden brown.

    Remove chicken and pre-cut vegetables from kit; chop into bite size pieces and set aside.

    Heat 3 Tbsp. vegetable oil over medium heat; sauté corn for 5 minutes. Add chopped chicken, vegetables and jalapeño pepper; cook for 5 more minutes.

    Remove skillet from heat, stir in mayonnaise and shredded cheese. Pour mixture into baking dish. Sprinkle with the shredded cheese from the meal kit.

    Bake uncovered for 10-12 minutes. Serve hot with tortilla chips.

    Tips

    Have extra tortilla chips on hand, just in case!
