my husband and i are kinda meat and potatoes people! we dont care for pastas and seafood, not to much into veggies either! But we do love salads! so any recipe ideas?! we LOVE mexican food! but i can never get the rice just right. OH and nothing weird like lamb or goat or what! stick to beef, chicken, and pork! THANKS in advance, 10 points for best answer!

TACO SALAD
1 can kidney or pinto beans, drained
1/2 – 1 head iceberg lettuce, shredded
8 oz. shredded cheese (I like mixed Mexican cheeses best)
2-3 chopped tomatoes
1/2 sliced onion
chopped cilantro
sliced avocado(s)
sliced black olives
3-4 handfuls crunched up tortilla chips (good way to use the ones in the bottom of the bag)
1 small jar/container salsa
Just toss it all together and enjoy! …. I know people who also add 1 lb. browned ground beef to it, but I don't like the hot meat in a cold salad….

RIBS – pork are better. boil water, stick in an onion (cut in to large peices), the ribs, and some seasoning salt and garlic peppers, and simmer on low for 3-5 hours until very tender. then put them on the grill on low for about 20-30 minutes with your fav bbq sauce (i love sweet baby rays). then make some garlic bread (you can get some already ready to go in the freezer section) and some baked potatoes. YUMMY!!!

try a chicken salad. a lettuce salad, with cut chicken meat in it. have croutons, cheese, pickles. breadsticks will be an added essential to the meal.

Thai green curry..try chicken or beef with jasmine rice…try this
Cooking time 30 mins to 1 hour
Ingredients
1 tbsp vegetable oil
2 tbsp green curry paste (according to taste)
1 tbsp soft dark brown sugar
1-2 thick stalks lemongrass, fat ends bashed with a rolling pin (optional)
750g/1½lb skinless, boneless chicken, cut into chunks (use breast and/or leg meat)
6-8 kaffir lime leaves, torn into pieces (if unavailable, use the grated zest of 1 lime)
400ml/14fl oz coconut milk
good shake of Thai fish sauce or light soy sauce
small handful of coriander, roughly chopped
½-1 lime, juice only
Method
1. Heat the oil in a wok or large frying pan. Add the green curry paste and sugar and cook over a fairly high heat for about a minute, stirring with the lemongrass, if using. Reduce the heat slightly and stir in the chicken pieces and lime leaves or zest until coated in the paste. Add the coconut milk, fish sauce or soy sauce and bring to a simmer, cooking for 25-30 minutes until thickened slightly. Stir in the coriander and lime juice. Check for seasoning, adding more fish sauce or soy sauce if needed.
2. The curry is now best left to sit for a few minutes so the sauce becomes creamier. You will also taste the true flavours of the curry paste ingredients when it's slightly cooler. Serve with lots of fragrant Thai jasmine rice.

I have a great enchilada recipe. You can basically add whatever you want to it – I listed what I have used in the past. I also included a great hashbrown casserole – it's delicious and sounds like something you and your husband might like – straight forward, potatoes, and nothing weird – LOL. Enjoy whatever recipe you end up making for dinner.
ENCHILADAS
1 Medium Onion (minced)
1 Can of GOLDEN Mushroom Soup
1 lb. Hamburger
½ cans of Milk (measure in soup can)
2 cans Enchilada Sauce
2 cups of Grated Cheese
Corn Tortillas
Sauté beef until brown, drain and remove. Sauté onion for about 10 minutes and add beef, enchilada sauce, soup and milk. Stir to blend thoroughly and simmer for another 10 minutes. Heat tortillas. In the middle you can add whatever type of meat you would like. I add ground hamburger, slices of marbled cheese and any type of hot pepper. Fold tortillas and cover with enchilada sauce. Top with grated cheese. Bake at 375° for 15 to 20 minutes .
HASBROWN CASSEROLE
Frozen Hashbrowns (1 ½ to 2 lbs)
1 can Cream of Chicken Soup
1 Large Onion (minced)
8 oz. Sharp Cheddar Cheese
1 pt. Sour Cream
1 Stick of Butter (softened)
Mix everything together (cheese should be shredded) and bake at 350° for ½ hour. Remove and mix. Top w/crushed potato chips and bake for another ½ hour.

get Perdue chicken, I like thighs best, yet whatever is your preferance, bake 3lbs in the oven, flip it on broil to get it golden brown season to your taste.
From this you have the makings of Chicken for potatoes baked a couple with the chicken, or micro waved, veggies are important, a side order of corn, or mixed veggies.
the chicken can be used to add to salads, make tacos or burritos from, and for chicken sandwiches on good whole wheat grained bread, for healthy living.
