anybody have a good recipe for tacos, enchilada's, refried beans or any other mexican food?

Tonight is mexican dinner at our house, was wanting to try something new and different, any help is appreciated!
I know haha Taco Bell!!!!! there great or go hire a mexican person to cook tonight for you

Enchilada Casserole
1 pound ground beef
1 can cream of mushroom soup
1 can tomato soup
1 can cream of chicken soup
1 small can diced green chiles
1 small can (15 ounce) hot enchilada sauce
1 pound longhorn cheese, grated
1 dozen corn tortillas
Directions:
Cook ground beef in large skillet until meat is done; drain. Then add each can of soup, chiles, and hot sauce. Heat mixture to boil and allow to simmer for 5 minutes. Take mixture off heat. Put four corn tortillas in bottom of 9 x 13-inch baking dish. Add one-third of the meat mixture and one-third grated cheese. Continue making layers of tortillas, meat mixture and cheese until all ingredients are used. Bake in 350 degree F oven for 20 minutes.

Mexican Snack Squares
Ingredients:
16 ounces Refrigerated Crescent Rolls
16 ounces refried beans
1 cup sour cream
1 Envelope taco seasoning mix
6 ounces shredded cheddar cheese
1/2 cup chopped green onions
1/2 cup chopped green bell pepper
1 cup Tomatoes — seeded and chopped
1/2 cup sliced black olives
salsa — Optional
Directions:
Heat oven to 375F degrees. Unroll dough into 4 long rectangles. Place crosswise on an ungreased 15×10x1 inch baking sheet; press over bottom and 1 inch up sides to form crust. Firmly press perforations to seal.
Bake at 375F degrees for 14 to 19 minutes, or until golden brown. Cool completely. Spread beans over crust to within 1/2 inch of edges. In a small bowl, combine sour cream and taco seasoning mix; mix well. Spread sour cream mixture over beans. Sprinkle cheese, onions, green pepper, tomatoes and olives evenly over sour cream.
Cover and refrigerate 1 hour. Cut into squares. Serve with salsa if desired.

You want something different for mexican dinner tonite?
Southern New Mexico Stacked Enchiladas
heat red enchilada sauce in 2 quart sauce pan just larger than your corn tortillas.
have chopped onions
browned ground beef
grated cheese, sharp cheddar preferably
shredded lettuce
diced tomatoes
and eggs ready to fry over medium
2 tortillas per person
stick a corn tortilla in the simmering enchilada sauce for about 30 seconds. With solid spoon lift out of sauce and place in middle of oven proof plate. On this sprinkle a couple tablespoons onions, a quarter cup ground beef, and a quarter cup of cheese. Place second soaked tortilla on top of this and repeat toppings. Place plate in oven at 300 for 10 minutes or in microwave on high for 1 minute. Fry eggs to over medium and place on top of enchilada, spoon about half cup of sauce over this. Sprinkle lettuce and tomato around edges.
You can have sour cream and guacomole with this if you want.
I call this "Fast Food" and use it for instantly getting dinner on the table! I can feed over 50 people in less than 30 minutes this way.
