In what ways is a traditional Mexican chocolate cake different from a traditional American chocolate cake?

Posted by: admin  /  Category: Mexican Traditional

First of all, lets talk about the difference between Mexican chocolate and "American" chocolate.
Mexican chocolate has been flavored with cinnamon, almonds and vanilla. It is available in Mexican markets and is commonly used for hot chocolate or mole sauces. It is more pure, therefore more perishable than the chocolate we Americans are used to. American chocolate is more processed and sweeter than Mexican and has ingredients (like wax) added to extend it’s shelf life.
Secondly, some Mexican Chocolate cake recipes are more for an adult tastes than a childs as they may include chili powder, cayenne pepper or balsamic vinegar! (but they can be sweet as well)
In Mexico this cake is called Pastel de Chocolate.
