I make this once a week, and it only has FRESH ingredients in it. You add as much "spice" as you want, depending on how many hot peppers you add, and what type. Habanero are the hottest. You can also make a green salsa, but substituting 4-5 tomatillos for the tomatoes.
FRESH SALSA
1 bunch fresh cilantro
1 white onion
2 green bell peppers, seeded
1-6+ hot peppers, seeded
3-4 tomatoes
1 TB crushed or minced garlic
1 TB olive oil
1 TB white vinegar
salt & pepper to taste
Pulse the cilantro in food processor until minced. Pulse the veggies in food processor until coarsely chopped. Mix all ingredients together and refrigerate

1/2 onion, chopped
1/2 green bell pepper, coarsely chopped
1/4 cup fresh cilantro
5 slices pickled jalapeno peppers, or to taste
6 fresh tomatoes, quartered
2 teaspoons olive oil
2 teaspoons red wine vinegar
1/2 lime, juiced
1/8 teaspoon salt
Place onion, bell pepper, cilantro, and jalapeno peppers into a food processor. Pulse until finely chopped. Add tomatoes, and pulse just a few times until the tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid.
In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, and salt.
Pour dressing over tomatoes, and stir well. Cover, and refrigerate for at least 1 hour.
