Salsa is the Spanish word for sauce, and in Mexico it refers to sauces that are used as an ingredient for a variety of dishes and as a condiment. Most salsas are especially spicy, due to the prominence of hot chili peppers in their ingredients. Literally hundreds of such sauces exist, including piquant fruit salsas. In the United States, salsa resembles a spicy tomato sauce from Mexico called salsa cruda, or raw salsa, and is used primarily as a condiment, especially with tortilla chips. In 1991, salsa outsold ketchup as the most popular condiment in America. Today, salsas account for almost half of the sauces sold in the United States. In 1992, salsa accounted for $802 million in sales; that figure is expected to reach $1 billion by 199.
References :
http://hubpages.com/hub/Salsa-recipe_

red salsa

3 medium sized tomatoes
5 green chiles serranos, they are the long skinny looking ones not jalapenos
A pinch of salt
A pinch of garlic poder
A tablespoon of sliced onions

Your going to boil the tomatoes, until they become tender where u can peel of the skin, then ur going to grill the chiles until those become a lil black from all sides this makes them tender too (those u dont peel) then u throw both of these in the blender, u add the rest of the ingredients, from the water u already have from boiling the tomatoes ur going to add it to the blender until covers the tomatoes, its not gonna be that much water, then u blend it by 5 seconds, which means ur going to blend for 5 seconds then stop then blend again and stop and so on, u do this so u can decide how thick u want ur salsa, so u stop when u want, good luck!
References :
Buy about 8 jalapenos, 2 small tomato's and 3 cloves of garlic. Toast the jalapenos and tomato's on a griddle like pan. While they are toasting mince the garlic up. When all sides are nice and toasted peel the blackened skin off and place them in a bowl. Smash the jalapenos and tomato's together. Add a little water to loosen every thing up. Add as much as you like. Next add the garlic, salt and pepper to the bowl. Mix all together.
Serve with chips or use on your burritos or Tacos.
References :
Canned tomatoes work the best because they are picked and canned at their peak.
References :
Lived in NM most of my life and ate a lot of salsa (every day).

*Green Salsa*
Boil the little green Tomatoes(they are called Tomatillos) and Jalapeno peppers in water when cooked transfer the Tomatillos, jalapeno peppers and a little bit of the water that you boiled to a blender add salt and 1 garlic clove and blend till it's smooth if you think it's too thick just add more of the same water and blend it all together again, taste it to see if it's o.k. of salt... and you have your salsa ready, I hope you enjoy!!!
References :
I buy salsa in the jar or from the Deli (in the tubs) and add cilantro, red onion, maybe some chili peppers if I have them, a can of diced tomatoes and a couple of fresh tomatoes chopped. The cilantro is the kicker and everyone thinks my salsa is the greatest plus I just doubled the original salsa serving!
